8 Selecting the Right Sink How is the sink going to be used? Do you wash a lot of baking pans? If so, consider a large single bowl sink or a dual level sink with enough room to lay the pans down to soak. Most dual level sinks feature an oversized bowl to wash or soak things, with another smaller sink for rinsing or a garbage disposal. Make sure both bowls are large enough to meet your kitchen needs. If kitchen responsibilities are shared, consider two sinks. One can be used for food prep and the other for clean-up. An island or bar sink, usually a smaller single bowl sink, is the best option. 8

11 Selecting the Right Sink 4. Making the sink and faucet work together Top mount kitchen sinks usually come with pre-drilled hole for the faucet, and possible accessories such as a lotion dispenser. Additional holes can be punched. Undermount sinks do not come with holes as the faucet and accessories will need to be put directly into the countertop The style of faucet will need to be considered when selecting a sink count all of the holes that will be needed (account for the spout, any handle combinations that will need separate holes, sprayer and accessories) does the faucet have the proper reach for the entire sink the wider the sink, the more reach is needed 11

12 Selecting the Right Sink Tips for Finding the Best Sink Be sure to measure the size of your cabinet and confirm that it will accommodate the dimensions of the sink. Remember it will take up length, width and depth Standard depth for a double basin is about 8. If you use large roasting pans and stock pots, look for 9+ depth. A sink with the drain hole placed farther back than the usual center position frees up space underneath by pushing the pipes closer to the back of the cabinet. 12

A relatively flat sink bottom increases usable bowl space and allows dishes and glasses to be safely stacked. Off-set drains Placing the drains to one side provides more flat space for stacking dishes and glasses and creates more usable space under the sink. 15 Stainless Steel What is stainless steel? Stainless steels are a family of steels that are resistant to corrosion (rusting) and elevated temperature. They must contain at least 10.5 % chromium. The chromium reacts with the oxygen in the air to form an invisible, protective chrome-oxide surface layer. This layer helps to prevent staining (rusting) of the surface. This does not mean that stainless steel will never rust. There are many different stainless steels with unique chemical compositions. Chemistry differences influence strength, corrosion resistance, and cost. Higher levels of chromium and the addition of other alloying elements such as nickel improve the corrosion resistance and make them easier to fabricate. The most commonly used stainless steel for sinks, flatware, appliances, and other consumer products is Type 304 when less expensive and less corrosion resistant stainless steels are used the consumer should not assume that all stainless steel products will provide equivalent performance. 15

16 Stainless Steel What do numbers 18/10 mean? The first number is the amount of chromium 18 specifies that the stainless steel is made up of 8% chromium The second number is the amount of nickel 10 specifies that the stainless steel is made up of 10% nickel 18/10 specifies that the stainless steel contains 18% chromium & 10% nickel This is a common name for Type 304 The higher the numbers the more corrosion resistant the material. 16

17 Stainless Steel Special Chemistry Originally, the manufacture process of stainless steel was fairly unsophisticated. Therefore, it was very difficult to control the exact quantities of each of the chemical components of the material. That made for variations in it's physical characteristics. Most of the chemical properties for any given specification are listed as a range of acceptable values. Even within these ranges, the physical properties of the material can vary significantly for any particular specification. Today, with advances in the technology of steel manufacturing, it is possible to control both the chemical and physical properties of the material with a high degree of accuracy. This allows for "designer grades" of stainless steel by manipulating some of the chemical components to the high or low side of their acceptable ranges. This thereby alters the physical properties of the finished material to suit a particular application. 17

18 Stainless Steel Stainless steel sinks are not forever flawless. No material is perfect for all conditions/situations. There is probably no other material that is more durable and more suitable for sinks than quality stainless steel. Since stainless steel sinks are made from nickel bearing stainless steel, the rich satin surface is compatible with any décor and color scheme. It is timeless and elegant, and its fine finish becomes more superb with use and time. A quality stainless steel sink, with proper care and maintenance, will give a lifetime of gratification. 18

19 Stainless Steel Stainless Steel Facts Type 301 vs Type 304 Type 301 (Chromium-Nickel) The chemistry of this alloy permits fairly severe cold working. Almost all automobile wheel covers are fabricated from this alloy. Applications also occur in the fabrication of springs. Type 301 is known for its great hardness, toughness and good fatigue life in the finished part. In addition, it possesses a high strength to weight ratio. As the Nickel content is reduced, (causing the alloy to become unstable) serious stress corrosion cracking is manifested. Type 304 (18/8 Chromium-Nickel) This companion grade to Type 301 and 302 and characterized by an especially low Carbon content while its Chromium and Nickel are somewhat higher. Because of its lower Carbon content type 304 is not so prone to give trouble after welding, due to carbide precipitation and resultant corrosion. Type 304 possesses heat and corrosion resistant properties that are superior to Types 301 and 302. It is non-magnetic as annealed, but slightly magnetic following cold working. 19

20 Stainless Steel Features and Benefits: Tough - Stainless steel is more durable than porcelain and cast iron, and more forgiving than composites. Stainless steel sinks won't chip, nick or crack. Luster - Stainless steel will not fade, and the finish is much more resistant to scratches. It keeps its luster longer while other materials will show their age. Absorbs Shock - On impact, sinks made of stainless steel will "give" to cushion glasses and dishes against breakage. Easier to Clean - Stainless steel retains its luster when cleaned with the proper cleanser and a soft towel. Healthcare facilities trust stainless steel sinks due in part to their sanitary surface. Greater Capacity - Stainless steel has strength and flexibility that allows for deeper sink bowls. It has more overall usable space than porcelain or cast iron. 21 Care Cleaning and Maintenance Chlorides - Chlorides are ingredients in most soaps, detergents, bleaches and cleansers. They can be very destructive to stainless steel. At the same time, chlorides are very water soluble; therefore, a thorough rinsing of the sink after each use to remove any residue. Scratches As with most metallic surfaces, a stainless steel sink will scratch. These are merely usage scratches and over time will blend into the overall finish of a sink. Water Quality - The quality of water can affect a sink's appearance. If water has high iron content, a brown surface stain can form on the sink giving the appearance of rust. Additionally, in areas with a high concentration of minerals, or with over-softened water, a white film may develop on the sink. To combat these problems, we suggest that the sink be towel dried after use. On a weekly basis, the sink should be well cleaned. Food - Heavy salt concentration or foods containing high levels of salt should not be allowed to dry on the sink surface. Again, a sink should be rinsed thoroughly after use. Cutting - A sink should not be used as a cutting board or chopping block. This type of abuse will lead to deep scratches in the sink finish and equally is never good for the knives. 21

22 Care Cleaning and Maintenance Precautions - the Do s of Cleaning Your Stainless Steel Sink Do...Rinse the sink thoroughly after each use. Thorough rinsing can be done by running the water for a few minutes and rubbing the cleaned area with a sponge. Do...Avoid exposing sink to strong chemicals. If contact occurs, quickly flush the surface with water. Do...Run cold water when pouring boiling water into sinks to try to minimize temperature shock. With stainless it isn't as important to remember that compared to other materials though. Do...Towel dry after each use to prevent mineral deposits from building up on the surface of the sink (although with a good quality stainless sink you can buff it back to the original "new" finish even after many years of scale and mineral build-up.) Do...Scour the sink once a week, being sure to rub in the direction of the satin finish lines Do...Remove nail polish with a non-acetone based nail polish remover and flush with water. 22

Don't...Set hot pans directly into sinks. Don't...Scour the sink across the satin finish lines. Scouring across the satin finish lines can damage the original sink finish. Don't...Allow liquid soap or other household cleansers to dry on the surface of the sink. Most brands contain chemical additives, which will affect the finish. Don't...Leave standing solutions of chlorine bleach and water in the sink for extended periods of time. If left on the sink too long they can cause surface pitting. Don't...Use a steel wool pad to clean your sink. Steel wool pads have a tendency to break apart and small particles of steel can become embedded in the surface of the sink. The steel particles will rust and will give the appearance that the sink itself is rusting. Don't...Use rubber mats or dishpans in the sink to protect the finish. Leaving rubber mats or dishpans in the sink can lead to surface rust or possible pitting. Don't...Leave wet sponges, cloths, or cleaning pads on the sink. This can lead to surface rust. 23

24 Frequently asked Questions I have a stainless steel sink and it is beginning to rust. Why? I thought stainless did not rust! Stainless does not "rust" as you think of regular steel rusting with a red oxide on the surface that flakes off. If you see red rust, there are several possible reasons. (1) Steel or iron scratched the sink and particles become embedded in the surface. These particles are much less corrosion resistant than the stainless steel and rust making it appear that the stainless steel is rusting. Stainless steel should never be cleaned with steel wool. (2) Damp steel or cast iron was left in the sink for a prolonged period of time and it rusted. The rust stained the stainless steel. (3) A fluid with a high concentration of chlorides (most dishwashing detergents) was left on the surface for an extended period of time. (4) The sink is made from a less corrosion resistant stainless steel and more care must be taken to keep it clean and avoid prolonged standing water. In most cases, light staining can be removed with a fine abrasive cleaner or non-metallic abrasive scouring pad. Some of these products will scratch the finish. Apply the cleaning product in the same direction as the polish to minimize damage. Products that are safe for cleaning glass or automobiles are less likely to damage the finish. Many kitchen cleaning products and stainless steel cleaners contain chlorides and should not be used. 24

25 Frequently asked Questions I used a steel wool pad to clean my stainless sink, and now it is scratched and there are some small rust stains. How can I remove the scratches and rust? Steel wool pads are made of steel wire. Iron particles from the pad have probably contaminated the surface. NEVER use an iron-based product on stainless steel. 25

The thicker the steel, the less susceptible it is to denting, bowing and noise transmission from pots and pans hitting the metal surface. The thickness, called "gauge", can be determined by its number. The lower the number, the thicker the steel. Most sinks come in 18 or 20 gauge steel.
