2 Foreword... It seems hard to believe that over 50 years ago (May 1964) the very first Monarch water softener was sold. Times have changed considerably in these 52 years, 34 of which have been in the food service industry, where we have progressed from an East Anglian based company, to one of, if not the largest water treatment companies in the UK. Monarch sold their very first scale prevention filter to Brasilia coffee systems and the Stills company in In fact we are confident that we were the very first company in the UK to offer bespoke filters systems to cover specific applications for the protection against both bad tastes/odours and hard water scale. Food preparation methods, such as steaming, rely upon the quality of the water supplying the machine. Using hard water, equipment such as Combi Steam Ovens, Pasta Cookers, Boilers and Bratt Pans, will suffer from a build-up of limescale which attacks elements. 11 Did you know? Every UK gallon has litres, but a US gallon only has litres. 1psi water pressure is generated by approx. 2' in height (feet head). Therefore a water tank 30' above the ground, generates 15psi, and 15psi is approx. 1 bar in water pressure. 1 degree Clark (water hardness measurement) is approx. 14.3ppm (parts per million); and ppm and mg/l (milligrams per litre) are the same measurement. In every litre there is 1,000 millilitres (ml), which is the same as 0.22 UK gallons, which is actually 1.76 pints. In every cubic metre of water there is 1,000 litres, and 1,000 litres is equal to 220 gallons. 14 Puro DeMineralisation Systems For the perfect shine on your glasses every time Monarch offers a range of Demineralisation Systems to suit a range of applications. Our de-mineralisation units remove up to 95% of total dissolved solids including calcium from the incoming water supply. This produces high quality water that leaves glasses clean and sparkling straight from the dish or glasswasher. Single units are normally dedicated to individual appliances. We offer six standard sizes 10, 15, 18, 23, 30 and 30 litre duplex. Where larger capacities of treated water are required, we can offer triplex systems. Our staff will only be too pleased to advise you as to the most appropriate system to meet your specific requirements. Our demineralisation systems are available with arguably the industries number one quality resin to meet specific requirements of the appliance. All DMS models are suitable for use with glasswashers and combination ovens. These units will not only protect the equipment from scale, but will reduce possible chloride attack and leave glasses spot free. 14

15 Puro DeMineralisation Systems For the perfect shine on your glasses every time Bottle or Resin Exchange DMS cannot be regenerated on site; therefore exhausted bottles need to be exchanged at the pre-determined intervals. The frequency of exchange will depend on the level of TDS (Total Dissolved Solids) in the water supply, and the volumes of water being treated. It is important to understand that Monarch does not provide an acid regeneration service, as we recommend either all new resin, using their DMRP (resin packs) or their DMEB (exchange bottle) service is used. This guarantees maximum capacity and performance with all new resin every time. Equally, this service is very protective of the environment as the resin or exhausted bottles can be disposed of in general household waste, as against many gallons of acid being sent indirectly to our waterways. We are also able to provide a water testing service to establish the capacity of each unit, simply by sending a sample to our lab for testing. This testing service is free to all our customers. A full monitoring service is available again free of charge as per the CFU s where Monarch will advise on the frequency of exchange. Our service department will be pleased to carry out exchanges on demineralisation units on an annual contract basis, if requested. These beads attract and retain any hardness in the water i.e. scale and scum, that causes so much damage to your system. When these beads become saturated with hardness, they need cleaning and regenerating for continued use. This is done by rinsing them with a weak solution of brine (salt and water). The brine together with the previously collected hardness is then automatically flushed down the drain. This process takes place automatically as determined by the softener, with all that has to be done is ensure the softener is kept full of tablet salt. In conclusion therefore, salt does not soften the water. The resin cleans/softens the water and when required the brine cleans the resin. During the cleaning of the resin, the previously collected scale and scum is discharged automatically down the drain together with the brine. At no time does the brine enter the water supply. Steam applications It is important to understand that any sodium in the water is retained within the boiler when steam is created and does not enter the main chamber or food. This sodium is then sent to drain on blow down. 17
