5 Page 4 1. IDENTIFICATION PLATE The identification plate is fixed on the inner side of the door (See the diagrams below). For any correspondence about your equipment, please quote: - The model number (Model.) - The serial number (Fabr. Nr) - The date (date) Identification plate Location of the identification plate and the gas changing plate Gas changing plate The box marked with a cross indicates the gas for which the appliance is adjusted A second plate is fixed in the proximity of the identification plate which indicates: - One or more gases for which the appliance is adjusted - The country(ies) of destination. Country of destination of the appliance IN CASE THE GAS IS CHANGED (See Section: Adaptation of the appliance from one gas to another in the Instructions for After Sales), Modify this plate, and indicate the new gas used. FILL the box "Country" with the name of the country in which the product is installed. NOTE: The Gas/Pressure pair for which the appliance is adjusted must be authorized in the country in question. Verify this point in the chart-paragraph Adaptation of the appliance from one gas to another in the instructions for after sales. CIDELCEM GRANDE CUISINE

INSTALLATION: GENERALITIES NATURE AND POSITION OF CONNECTIONS See "Technical data" at the beginning of this manual. 2.1 GENERAL REQUIREMENTS The installation, modification or repair of the appliance must be carried out according to current regulations by a specialised fitter. These appliances must be installed with sufficient ventilation to prevent the formation of excessive concentrations of substances harmful for health within the premises in which they are installed. The appliance belongs to type A (not connected to an exhaust duct for combustion products). The air rate required for supplying combustion air is 2m3/h of heat rate. These units must only be placed against a wall or another appliance. The wall must be of noncombustible materials or, if not, must be covered with an appropriate, good insulating and noncombustible material. The manufacturer certifies that the packaging conforms to the provision 94/62/CE of and requests that the final recipient observes the provision with regard to recycling or reuse of the packaging materials. In case of non fixed material, never handle the fryer with oil filled in its tank: the latter must be drained before handling. In case of non fixed material, always handle the material carefully to avoid any tilting and dropping. Warning! The gas fryers are fitted with a polarised electronic flame control box. When connecting to the mains, check that the neutral lead is properly connected to neutral and phase lead to phase. 2.2 HANDLING The appliance should only be handled with adapted lifting equipment. Should the appliance need to be transported, it must be done on its original pallet and must not be stacked under any circumstances. If the appliance is to be moved without a pallet, it should be carried and not pulled. 2.3 UNPACKING Before installation, remove the strapping from the appliance. The individual parts are not bolted down. Remove plastic film from the stainless steel parts before heating. CIDELCEM GRANDE CUISINE
7 Page ACCESS TO THE COMPONENTS PLACED BEHIND THE FASCIA a) Dismantling the fascia - Unlock the fixation screw of the control knob. - Remove the electrical control knob and the draining lever in the case of a ready-to-install fryer. - Unscrew and remove the 2 screws M5 x 16 under the strip. - Remove the panel: for this purpose, lift it 1, then pull it outwards by its lower part and free it downwards 2. b) Access to the electrical components - Remove both top screws on the left and right of the electrical board. - Tilt the electrical board outwards. For reassembly, proceed in reverse order. CIDELCEM GRANDE CUISINE
8 Page 7 3. INSTALLATION: POSITIONING 3.1 ASSEMBLY OF THE APPLIANCES ON A COMMON UNDERFRAME Place one appliance on the frame, with the rear of the appliance and the underframe approximately aligned. (The underframe is symmetric, front and rear being identical). Push the unit backwards until the hooks in the base are secured into the 25mm square holes provided. Repeat these two operations for each appliance to be fitted on the same underframe. From the front, fix the appliances to the underframe with two HM 5 x 16mm screws + 2 x 5 mm flat washers either from inside when the appliance design makes this possible (cupboard) or from underneath. Connect the units to each other: 1) by the rear interior in the way of the flue by means of 5 x 16mm bolts irrespective of the type of equipment to install. 2) From the front, at the level of the fascia after having removed the trimming fascia (see section). - Use HM5 x 16mm screws + 5mm Ø flat washers for a boiling pan or a deep fat fryer connected to a cooking unit (a captive nut is located in the side rails behind the fascia). - Use HM5 x 16mm screws + 5mm Ø flat washers to connect the cooking units together, having removed the M5 captive nut from one of the 2 appliances (from the screw side), using a screwdriver. 9 Page ASSEMBLY OF APPLIANCES ON INDIVIDUAL STANDS Fasten the appliances together. 1) at the back through the flue, using HM 5 x 16 bolts irrespective of the type of appliance. 2) at the front behind the fascia, after having removed the instrument fascia (see previous paragraph) - Use HM5 x 16mm screws + 5mm Ø flat washers to connect the cooking units together, having previously removed the M5 captive nut from one of the 2 appliances (from the screw side), using a screwdriver. 3) behind the front legs, using a clamp: a) Place the clamp opposite the slots. b) Tighten manually as far as possible. c) Finish tightening with one HM5 x 60 bolt CIDELCEM GRANDE CUISINE
10 Page ASSEMBLY OF APPLIANCES ON A MASONRY BASE WARNING: This solution is only possible for fryers without the optional battery filtering and the gas fryers without the optional built-in filtering. Three solutions are possible: 1) Neutral top unit over a technical compartment sized ) Valve cupboard sized 500 with all possibilities for cooking tops or neutral except induction. 3) Technical cupboard at end of stove (width 250) with neutral top necessary (access doors at ends) CIDELCEM GRANDE CUISINE

Note: If the appliances are delivered separately from the underframe, install the appliances on one or more underframes spaced 2000 mm (see paragraph 3.1: Assembly of the appliances on the common underframe without securing the appliances between them). Connect electricity to the appliances (see paragraph 4: Installation: connections) Assemble the appliances between them. - Fasten the appliances between them at the rear part in the way of the collectors with one HM5 X 16 screw + flat washer Ø 5. - Fasten the appliances together at the front, after the fascia is removed (see paragraph 2.4) with 2 HM5 X 16 screws + flat washers Ø 5. Connect gas, water and drainage to the appliances. Fix the trimming plinths. One front plinth per underframe spaced 2000 mm and one right and one left side plinth per stove, depending on the order. - Assemble one or more front plinths with connecting elements (depending on the underframe number) (2 screws per plinth). - Fix one or more front plinths (1 and 2) on one or more underframes (two screws at least per plinth). - Fix the back element (onto the end appliances before they are securely installed) onto the underframe with a hex head screw (3). - Fix the left and right side trimming elements (4) (2 screws at the front and 1 screw at the back) CIDELCEM GRANDE CUISINE
12 4.1 ELECTRICAL CONNECTION Page INSTALLATION: CONNECTIONS Warning! These appliances are equipped with a polarised electronic flame control box. When connecting to the mains, check that the neutral lead is properly connected to the neutral and the phase lead to the phase. Location of the equipotentiality terminal The electrical connections are to be provided at the back on the right side, irrespective of the model. - Remove the terminal box cover. - Feed the cable through the cable gland. - Tighten the cable gland. - Connect the wires. - Connect the earth to the equipotential terminal. - Put the terminal box cover back into place. Only use power supply cables of the H07 RNF type with 3 x 1.5mm² section. Provide a suitable isolating device for safety of personnel (with contact separation of at least 3mm). The installation must comply with current applicable national legislation (for France, standard NF ). The appliance must be connected to the earth. The various electrical appliances must also be connected with an equipotential bonding (all metallic structures to the same voltage) by means of a terminal provided for this purpose and located next to the connection cable gland. The manufacturer cannot be held responsible in the event that these instructions are not observed. CIDELCEM GRANDE CUISINE
13 4.2 GAS CONNECTION Page 12 Check that the adjustments made to the equipment correspond to the nature and pressure of the gas distributed in the installation. (See paragraph 1: Identification plate). Connect the appliance to the gas inlet piping by interposing a shut off valve which will isolate the appliance from the rest of the plant. The gas supply piping will be of a size so as to minimise the load losses: Its diameter will be determined depending on its run (length, elbow number ) and total power of the appliance. To check the gas presure of the appliance, just connect a water column pressure gauge to the pressure tap located on the gas unit (Pressure tap A on the sketch hereunder). Pressure tap A The gas pressure so measured must be equal to that indicated on the identification plate for the gas used (See paragraph 1: Identification plate). Arrivée Gas inlet gaz The gas connections must meet the standards in force (DTU 61.1) and may only be carried out by qualified technicians. These connections are made to a 1/2" male gas stud (see above). CIDELCEM GRANDE CUISINE

In the following chart, select: - The country concerned. - The gas and category of the equipment (as noted above). - The gas and pressure for which the equipment is to be adjusted. - Note and carry out the necessary operations. - Change the adjustment plate and mark the new gas used.
