2 JUICE PASTEURIZER PAS What is Pasteurizing The process was developed in 1864 by the French chemist Louis Pasteur. By brief heating up of food and other perishible matters from 60 C to 90 C, most of the micro-organisms will be destroyed. Once the materials are in a final range, no further micro-organisms will infiltrate. The taste and quality of the product is not affected by this procedure. The automatically working Juice Pasteurizer is designed for pasteurising or heating up of juice made from produce. Before taking into operation the machine has to be connected to the heating medium and the exhaust system. Then the connection to the juice reservoir and to the filling device has to be made. The juice-pump pumps the available juice through the plate heat exchanger. The required temperature (80 C) must be delivered from an external heating system. 6 FLASH PASTEURIZER PAS with regeneration heating The Flash Pasteurizer is designed for pasteurising and fast recooling of juices. Subsequently the juice can be stored aseptic in tanks or filled in BAGinBOXes. Furthermore this system is used for protein precipitation and cloud stabilisation. The cold juice is preheated through a regeneration heat exchanger and the pasteurizer brings the juice up to the required temperature. After passing the holding tubes in 30 seconds the hot juice will be recooled in the regeneration heat exchanger. 7 ELECTRO PASTEURIZER EPAS 210 The Electro Pasteurizer EPAS 210 is an all-purpose electric pasteurizer with tubular heat exchanger and a capacity up to 210 liter per hour. The juice will be piped from the reservoir directly into the tubular heat exchanger, which heats up the juice to the choosen temperature. The temperature range is infinitely variable up to 95 C. The electric heating has a double stage control for setting the right power, if smaller packages are filled.
