5 INTRODUCTION To help demonstrate the superior performance of Thermador s Professional Series ranges and rangetops, Thermador examined the functionality, durability and quality of its products and compared them to equivalent models from Viking and Wolf. Product feature comparisons and test results are based on product testing conducted in Thermador s Research and Development Laboratory and product information published by each manufacturer. To assure comparability, standardized testing procedures were reused each time in a controlled environment. To assure objectivity, established testing procedures and quantitative metrics were used where possible and appropriate. CSA tests the professional ranges for compliance to national standards to ensure they comply with applicable standards for safety and performance. The CSA standard for burner testing states that a burner BTU must measure within 5% of its claimed BTU. For example: 15,000 BTU burners must measure within 14,250 BTU 15,750 BTU 18,000 BTU burners must measure within 17,100 BTU 18,900 BTU The Viking burner measured at 17,685 BTU is burning well out of tolerance and out of spec. The Thermador and Wolf burners are burning within the specified 5% tolerance range. 7

8 THERMADOR SETS THE BENCHMARK FOR THE LOWEST SIMMER SETTING TOMATO SAUCE SIMMER TEST Thermador: Passed the Tomato Sauce Simmer test. The sauce did not boil after reducing the heat on the XLO burner. Of all units tested, the Thermador Star burner delivers the lowest simmer temperatures with the ExtraLow setting. Viking: Failed the test. The sauce boiled throughout the 30 minutes test period. Wolf: Passed the test, however, the sauce gave small bubbles that did not break the surface. CHOCOLATE MELT AND HOLD TEST Thermador: Passed the Chocolate Melt and Hold test. The Chocolate can be held indefinitely without scorching due the ExtraLow feature. Viking: Failed the chocolate test and started to burn before completely melting the chocolate. Wolf: Passed the test, however, the chocolate lost its shape but did not scorch. 8

9 THERMADOR S PATENTED STAR BURNER DELIVERS EVEN HEAT DISTRIBUTION and superior results versus a round burner The Star Burner has more flame ports then a comparable round burner. The Star Burner s unique shape creates a perimeter 56% longer than a comparable round burner, thus delivering the flame more evenly across the pan with a smaller cold spot. 10 A THERMADOR GRILL DELIVERS CONSISTENT TEMPERATURES THERMADOR Our new full-size grill accessory won t flare-up to burn your food. Within 15 minutes, the grill will reach and maintain its maximum temperature of 500 F to produce excellent grilling results. The grill is thermostatically controlled to deliver the most consistent results from front to back and side to side. VIKING Passed the Strip Steak Grilling test with even cooking results. However, temperature adjustment is only Low/Med/High. WOLF Failed the Strip Steak Grilling test due to flare-ups burning the steaks in front and uneven cooking results overall. There is no temperature adjustment only an On/Off setting. 10

11 A THERMADOR GRIDDLE IS THE ONLY ONE MADE WITH THE HIGHEST QUALITY MATERIALS THERMADOR Offers a Titanium-surface, rust-proof, non-stick cast aluminium electric griddle which makes it easy to wipe clean and maintain. The griddle is also dishwasher safe. In addition, the griddle is thermostatically controlled to deliver the most consistent results across the entire cooking surface. VIKING Has a carbon steel griddle. The griddle ships from the factory with a greasy substance covering the surface to protect it from rusting while it is in the box or on display at retail. This substance is difficult to remove and once removed, the surface is exposed to the elements and may rust over time. The grease collection tray is large and difficult to clean. WOLF Has a carbon steel griddle. The grease doesn t always flow directly into the grease pan, but instead, rolls off the sides underneath the grease pan. The griddle is difficult to clean, even after simple food items like pancakes and eggs. 11

23 PRO HARMONY STANDARD DEPTH RANGES HAVE THE INDUSTRY S FASTEST SELF-CLEAN CYCLE THERMADOR Has the fastest self-clean mode on the market with only 2 hours from start to finish, including cool down. The Pro-Harmony 48" range cleans both ovens simultaneously in only 2 hours, while making sure that the range control knobs and oven window remain cool and safe to the touch. VIKING* The self-cleaning cycle lasts approximately 3 1/2 hours with an additional 30 minutes for cooling down, for a total of 4 hours. After boiling for one minute, the burner is turned to the lowest setting and cooked for 30 minutes. Temperatures are taken every 5 minutes and the sauce is observed for bubbles that break the surface and spitting of the sauce. At the conclusion of the test, the bottom of the pan is observed for scorching or burning of the sauce. Pass Fail Chocolate Melt and Hold Test Two squares of unsweetened baking chocolate are melted using the lowest setting on the lowest rated burner. After melting, the chocolate is observed for 10 minutes to check for scorching or burning. Pass Fail Strip Steak Grilling Test Four 1 1/2 inch thick strip steaks are grilled on the cooktop grill using the setting suggested in the Use and Care manual. Steaks are evaluated for searing the outside while cooking the steak medium rare (145ºF). Flare up of the grease or burning of the exterior of the steak is noted. Pass Pass 30

31 WOLF DF484CG 4 hours/8 hours for 48 ovens CONCLUSION Thermador's self-clean cycle simultaneously cleans both the large and small oven faster than any range in its class. Thermador also keeps the cooktop temperatures cooler than either Viking or Wolf. 4.5/2.5 cu.ft. Wolf has the greatest oven capacity for the tested models. 5 x 15,000 BTU, 1 x 9,200 BTU Thermador has the most powerful rangetop. As shown on page 7, the Viking burners burn out of spec. 1 x 325 BTU Wolf states the lowest minimum burner output on 1 burner, however, this burner tested at over 1200 BTU s which is significantly out of spec. 3.2 (marginal) Thermador's convection oven produced even browning results and performed better than both Viking and Wolf. 15,390 BTU 24:20 minutes Thermador s patented Star Burner s unique shape results in superior flame spread, which efficiently delivers faster and more even heating results compared to Viking and Wolf. Pass Thermador's ExtraLow feature cycles the flame on and off, preventing the tomato sauce from boiling or scorching after heat is reduced. Pass The chocolate can be held indefinitely without scorching due to the cycling of the flame on ExtraLow. At the lowest XLO setting, the 100 F temperature will hold chocolate for hours. Fail Thermador passed the test without any grease flare-up or burnt steaks. Within 15 minutes, the grill will reach and maintain its maximum temperature of 500 F. Viking passed the test with even cooking results. Wolf failed the test because of grease flare-ups, burnt steaks and uneven cooking results. 31

33 PROFESSIONAL SERIES FREQUENTLY ASKED QUESTIONS Thermador passed the Chocolate Melt and Hold Test and the Tomato Sauce Simmer Test but Viking did not. How can Thermador s Star Burners deliver both excellent low simmer and fastest time to boil? Every Thermador Professional Rangetop and Range features a Simmer (SIM) setting equivalent to 3,000 BTU/hr. on the ExtraLow Burners and 2,100 BTU/hr. on all other burners. In addition to the Simmer setting, every model has two burners featuring Thermador s ExtraLow (XLO) function which is excellent for melting chocolate or simmering delicate sauces. No need to sacrifice a large burner for a small simmer burner (like Wolf), the Star Burner is 3-in-1. Why does ExtraLow deliver better results than Viking s VariSimmer setting? Themador s ExtraLow (XLO) setting is equivalent to 375 BTU/hr. This setting is significantly lower than Viking s VariSimmer setting. (No published data found on Viking. Thermador tests found VariSimmer to be equivalent to 1080 BTU/hr.) Thermador s XLO, the very lowest setting, is achieved by cycling the flame on and off. XLO also has a wide range, so the amount of cycling can be precisely controlled for perfect results. On the lowest end of XLO, Thermador can maintain temperatures as low as 100ºF. How does Thermador s 18k BTU burner out-perform a 15k BTU burner from Viking or Wolf? Themador s patented Star Burner design is uniquely shaped to deliver the flame more efficiently than comparable round burners. This results in faster time-to-boil and a smaller cold-spot in the center of the pan. Why does Thermador s ExtraLow feature automatically cycle the flame on and off? The XLO feature has a range from low to high. On the lowest XLO setting, the flame stays on for only 8 seconds and goes off for 52 seconds each minute. At the highest end of the XLO settings, the flame stays on for 52 seconds and goes off for 8 seconds each minute. The flame cycles on/off in order to control the pan s temperature. The more the flame is off, the lower the temperature in the pan. On the lowest setting of XLO, food can be held as low as 100ºF. The benefits of the flaming cycling on and off is all day simmering without stirring or scorching on the bottom of the pan. 33
