레토르트식품이란높은온도를가열하여제품내, 외에무균성을부여한것으로파우치, 알루미늄, 병, 캔등을적충한필름용기에조리가공식품을충진, 밀봉후가압, 가열살균후냉각한식품을말한다. 초기방식은에너지소비량이많고탱크내균일한온도차를유지못하는스팀식방식을사용하였으나점차제품품질을향상시키기위하여열수 ( 침수 ) 식을사용하였다.

Has the smallest energy consumption and temperature deviation among all equipments. Has short amount of time remaining in high temperature, preventing damages to flavor and color. Allows low temperature sanitization (70-80 C)as well as temperature elevation for each time and level. Steam 스팀식 에너지소모량이가장크며 (2 차가열시 1 차열원을보존할수없음 ) 품질보다는멸균목적으로대량의제품을생산하는데적합하다.( 전투식량, 캔제품류 ) Has the biggest energy consumption amount (secondary heating cannot preserve the first heat source) and is fit for mass production for pasteurization purposes rather than quality enhancement. (Battle food, can products) Hot Water 열수 / 침지 / 치환 열수를상부탱크에서히팅, 투하하여사용하는방식으로최근가장많이적용되는방식이나폐수발생및에너지소모량이크다. This method heats and drops hot water from upper tank, is used very often these days but creates waste water and has high energy consumption rate.
