Ingredients Serves 10 1 orange 75g granulated sugar 50g pistachio nuts 125g fresh cranberries 1 tsp baking powder 225g self-raising flour 4 medium eggs 225g caster sugar 225g unsalted butter Preparation Soften the unsalted butter. Chop the pistachio nuts. Zest and juice the orange. Method 1. Preheat the oven to 180 C (fan 160 C) Gas 4. Place 10 M&S mini loaf cases on a baking sheet. 2. Cream the butter, sugar and orange zest in a large bowl until light and fluffy. Beat in the eggs, one at a time, then fold in the flour and baking powder. 3. Fold in two-thirds of the cranberries and nuts. Divide the mix between the cases, top with the remaining cranberries and nuts. Bake for minutes or until a skewer inserted comes out clean. 4. Pierce the loaves a few more times with the skewer. Mix together the orange juice with the sugar then drizzle over the warm loaves. Leave to cool before serving. 8 9
