It will include a look at food products from all over the world to get a sense of the diverse and widespread nature of fermentation. The focus of the course will be on common themes: the microbes used and how they are managed to produce safe fermented foods. This is not a practical course, with recipes and hands-on experiences. The focus is to provide background information of interest to those who enjoy consuming fermented foods and drinks. Extreme Plants: Radical Adaptations in the Vegetable Kingdom Tuesdays, March 26 April 30 (six part series) (make-up date May 7, 2019) 6:30 7:30 pm Plants live in all but the most inhospitable environments. Because of being immobile, they have had to evolve creative strategies to perform the basic tasks of acquiring food, regulating temperature, reducing water loss, and reproducing. Dr. Jordan Teisher will examine some of the most dramatic examples of plant adaptations, including carnivory, parasitism, mimicry, and drought tolerance. By exploring the biology underlying these extreme evolutionary innovations, students will gain an understanding of the basic challenges facing all plants and a greater appreciation for the diversity and ingenuity of plant form and function.
