3 RESTAURANT AIR MANAGEMENT Issues Facing Kitchens - Cooking units generate substantial heat and airborne cooking by-products such as water vapor, grease particulates, smoke and aerosols. - Kitchen air exhausted to remove cooking effluent must be replaced with air to avoid excess negative space pressure. - Most restaurants have constant speed ac motors on exhaust hood, make-up air, and rtu supply fans. - Kitchen areas need slight negative pressurize to keep cooking by-products, and conditioned air from the rtu.
