The identity of the source of shellstock that are sold or served not maintained by retaining shellstock tags or labels for 90 calendar days from the date that is recorded on the tag or label, as specified under item (03)b of this subsection by using an approved record keeping system that keeps the tags or labels in chronological order correlated to the date that is recorded on the tag or label, as specified under item (03)b of this subsection. While handling food or utensils, food employees not wearing effective hair restraints and clothing that covers body hair to prevent the contamination of food or food-contact surfaces. An effective hair restraint means any cap / hat / hair net made of fabric / cord / plastic / paper that effectively covers and holds hair in place. The use of effective hair restraints also applies to any exposed scalp or facial hair where there is the potential for contamination of food or food-contact surfaces. An effective hair restraint shall also be used in the partial or complete absence of scalp hair to preclude touching of the scalp and returning to food handling without hand-washing. Facial hair restraints are not be required when facial hair is well-groomed and trimmed. Employee with partial or complete absence of scalp hair shall wear an effective hair restraint while handling (foods / utensils). New Violation. COMMENTS 08/25/2018 FOOD SERVICE MANAGER REQUIRED A certified manager must be present and on duty [Section 20.53(a)] at all times in each food establishment and in any food preparation area (each physically separated area in which food is manufactured, produced, prepared, processed or packaged). Except as specified in subitems b through d of this item, wood and wicker may not be used as a food-contact surface. Hard grained wood; such as but not limited to maple, walnut, mahogany, bamboo and pecan may be used for cutting blocks, cutting boards, salad bowls, and baker's tables. Wood may be used for single-service articles, such as chop sticks, stirrers, or ice cream spoons. The use of wooden paddles used in confectionery operations for pressure scraping kettles during confectionary preparation at high temperatures is permitted. Treated wooden wicker baskets as specified in subitem d[02] of this item may be used for proofing of bread, provided the product is fully baked after proofing. The use of wood as a food-contact surface under other circumstances is prohibited. If cutting boards are used, they shall be easily removable in order to facilitate cleaning. The use of wood or wood product shelving, storage racks, or dunnage racks in cold storage units is prohibited.
