5 Class 135 recipe ( 200o C / Gas 6 ) Ingredients : Flaky Pastry : 225g plain flour, 175g butter, a squeeze of lemon juice, approx. 8 tbs water, Filling : 50g butter, 50g muscovado sugar, 1/4 tsp cinnamon, 1/4 tsp mixed spice, little grated nutmeg, 100g currants, 50g mixed peel. Topping : milk, caster sugar. Method : Make the flaky pastry using listed ingredients. Combine the filling ingredients. Roll out the pastry and cut into 10cm rounds. Divide the mixture between the rounds. Dampen the pastry edges with water, gather the edges and pinch to seal well then turn your sealed pastry parcel over. Flatten the cake gently with a rolling pin so that the filling begins to show through. Make three small cuts in the top then brush with milk and dust with caster sugar.
