4 Instructions 1 Instructions 1.1 Generl sfety instructions Risk of personl injury During use the pplince nd its ccessible prts become very hot. Children must be kept wy from the pplince. Never touch the heting elements during use. Keep children below the ge of 8 wy from the pplince unless they re constntly supervised. Children must not ply with the pplince. Never rest metllic objects such s knives, forks, spoons nd lids on the pplince during use. Switch off the pplince immeditely fter use. Never try to put out fire or flmes with wter: Turn off the pplince nd smother the flmes with fire blnket or other pproprite cover. Clening nd mintennce must not be crried out by unsupervised children. Do not clen the pplince immeditely fter turning it off wit for it to cool down first. Hve qulified personnel crry out instlltion nd ssistnce interventions ccording to the stndrds in force. Do not modify this pplince. Do not insert pointed metl objects (cutlery or utensils) into the slots in the pplince. Do not try to repir the pplince yourself or without the intervention of qulified technicin. Every other use is considered improper. This pplince my be used by children over the ge of 8 nd by persons with reduced physicl, sensory or mentl cpcity, or without sufficient experience or knowledge, provided tht they re supervised or instructed by dults who re responsible for their sfety. The pplince is not designed to operte with externl timers or with remote-control systems. 1.4 Disposl This pplince must be disposed of seprtely from other wste (Directives 2002/95/EC, 2002/ 96/EC, 2003/108/EC). The pplince does not contin substnces in quntities sufficient to be considered hzrdous to helth nd the environment, in ccordnce with current Europen directives. To dispose of the pplince: Cut the power supply cble nd remove it long with the plug. EN Power voltge Dnger of electrocution Disconnect the mins power supply. Unplug the pplince. 5

6 Instructions Deliver the pplince to the pproprite recycling centre for electricl nd electronic equipment wste, or return it to the retiler when purchsing n equivlent product, on one for one bsis. Our pplinces re pckged in nonpolluting nd recyclble mterils. Deliver the pcking mterils to the pproprite recycling centre. 8 Description 2.2 Control pnel 1 Return knob This knob llows you to return to the previous item in the pplince's menu. It lso llows you to turn the oven light on or off mnully. 2 Disply Displys the current time, the cooking prmeters nd ll the pplince s functions. 3 Control knob This knob llows you to turn the pplince on nd off nd select the vrious vilble functions. Turn the knob right or left to chnge/select the required item. Press to confirm. Keep the knob pressed in for t lest 5 seconds to immeditely complete ny cooking opertion. 8

9 Description 2.3 Other prts Shelves The pplince fetures shelves to position trys nd rcks t different heights. The insertion heights re indicted from the bottom upwrds (see 2.1 Generl Description). Cooling fn The fn cools the oven nd comes into opertion during cooking. The fn cuses stedy outflow of ir from bove the door which my continue for brief period of time even fter the pplince hs been turned off. Interior lighting The pplince s interior lighting comes on: When the door is opened. When ny function is selected, with the exception of the Descling, Sbbth nd Vpor Clen functions; Turning the return knob to the right or left when no function is selected (turn the temperture knob to the right or left gin to switch off the internl lighting). In order to sve energy, the light turns off fter minute t the strt of cooking (this function cn be dectivted vi the secondry menu). 2.4 Avilble ccessories Perforted try Useful for steming fish nd vegetbles. Try When the door is open, it is not possible to turn off the interior lighting. EN Useful when cooking ckes (with cooking times of less thn 25 minutes or without stem), rice, bens nd cerels. It is lso essentil for collecting liquids produced by steming or defrosting foods contined in the perforted try bove. 9

Sponge Useful for removing condenstion nd the remining wter from the oven. 2.5 Other cooking continers You my lso use your own continers for cooking, s long s they re resistnt to high tempertures. For stem cooking, the use of metl continers is recommended. Metl fcilittes better distribution of het to the foods. It is norml for metl continers to deform somewht during hightemperture cooking, but they will return to their originl shpe when they cool. Thick cermic pltes my require more het thn norml. Longer cooking times my be necessry. Some models re not provided with ll ccessories. The ccessories intended to come into contct with food re mde of mterils in ccordnce with the provisions of current legisltion. Originl supplied nd optionl ccessories cn be requested to Authorised Assistnce Centres. Use only originl ccessories supplied by the mnufcturer.

11 3 Use 3.1 Instructions High temperture inside the oven during use Dnger of burns Keep the oven door closed during cooking. Protect your hnds by wering oven gloves when moving food inside the oven. Open the pplince door crefully during or fter cooking. Tke cre becuse stem my not be visible t certin tempertures. Do not cook dishes contining lrge quntities of strong lcoholic beverges. Alcohol vpours in the oven could ctch fire. Do not touch the heting elements inside the oven. Do not pour wter directly onto very hot trys. Keep children wy from the pplince when it is in use. Improper use Risk of dmge to enmelled surfces When steming, lwys plce the try below the perforted try in order to ctch ny drips. Do not cover the bottom of the oven cvity with luminium or tin foil sheets. The bse of the oven nd the evportion try must lwys be left free. Dishes must be het nd stem resistnt. Do not use silicone moulds when steming. If you wish to use greseproof pper, plce it so tht it will not interfere with the hot ir circultion inside the oven. Do not plce pns or trys directly on the bottom of the oven cvity. Do not pour wter directly onto very hot trys. EN 11

12 High temperture inside the oven during use Dnger of fire or explosion Do not spry ny spry products ner the pplince. Do not use or leve flmmble mterils ner the pplince. Do not use plstic cookwre or continers when cooking food. Do not put seled tins or continers in the oven. Do not leve the pplince unttended during cooking opertions where fts or oils could be relesed. Remove ll trys nd rcks which re not required during cooking. 3.2 First use 1. Remove ny protective film from the outside or inside of the pplince, including ccessories. 2. Remove ny lbels (prt from the technicl dt plte) from the ccessories nd from the oven cvity. 3. Remove nd wsh ll the pplince ccessories (see 4 Clening nd mintennce). 4. Het the empty oven t the mximum temperture for t lest 20 minutes to burn off ny residues left by the mnufcturing process (see 3.4 Using the oven). 5. You must set the current time in order to strt using the pplince (see Setting the time ). 3.3 Using the ccessories Rcks The rcks must be inserted into the side guides until they come to complete stop. The mechnicl sfety locks tht prevent the rck from being tken out ccidentlly hve to fce downwrds nd towrds the oven bck. Gently insert the rcks into the oven until they come to stop. Clen the rcks nd trys before using them for the first time to remove ny residues left by the mnufcturing process. 12

13 Trys The try must be inserted in the groove in the rck. 3.4 Using the oven Setting the time EN In prticulr, the perforted try must be inserted in the groove in the rck bove it. In this wy it is possible to collect the liquids seprtely from the food tht is being cooked (configurtion 2 + 1, see Preset recipes tble ). When using the pplince for the first time, or fter power filure, the symbol will flsh on the disply. In order to be ble to strt ny cooking opertion, the current time must be set (if the oven is being turned on for the first time, it is lso recommended you set the required lnguge). Press the control knob to enter the settings menu. The pplince lnguge is set to English by defult. When first connecting or fter the power hs been cut for time it will be necessry to wit few seconds before you cn interct with the pplince. 13

14 Stem function settings Do not plce food or ny other object directly on the bottom of the oven. The bse of the oven nd the evportion try must lwys be left free. 1. Plce the food inside the oven. 2. Press the control knob to ctivte the pplince. 3. From the min menu, turn the control knob to select cooking functions. 4. Press the control knob to confirm the selection. 6. Press the control knob to confirm the selected function. The disply shows the screen for setting the steming prmeters. 7. Turn the control knob to modify the cooking temperture. The lowest temperture tht cn be set is 30 C. The vlue vries by 5 C ech time the control knob is turned. 8. Press the control knob to confirm the cooking temperture set (for exmple 90 C). 5. Turn the control knob to select the stem function. 14

15 9. Turn the control knob to modify the cooking durtion. 10. Press the control knob to confirm the cooking time set (for exmple 25 minutes). A request to fill the reservoir with wter is shown on the disply. EN 11. If you wish to set n end of cooking time, turn the control knob to set progrmmed cooking. Filling the reservoir Use cold tp wter which is not too hrd, softened wter or still minerl wter. Do not use distilled wter, tp wter with high chloride content (> 40 mg/l), or other liquids. 12. Press the control knob to confirm the end of cooking time (for exmple 13:30). 14. Fill continer (e.g. jug) with sufficient wter for the cooking durtion. 15. Open the oven door. 16. Rest the continer on the open door. Note: the continer with the wter must hve gross weight lower thn 5 kg. 13. If you do not wish to set n end of cooking time, wit few seconds. 15

16 17. Extrct the tube from its set nd immerse its end in the continer until it reches ll the wy to the bottom. In the event tht the wter runs out, the pplince will utomticlly stop the cooking process, buzzer will sound nd the disply will show request to fill the reservoir with wter. 19. When finished, the disply indictes tht you cn strt to use the stem function. 20. Shke the tube in order to remove ny remining wter. 18. Press the control knob to strt filling the pplince s reservoir with wter. The pplince will utomticlly drw the quntity of wter necessry for cooking on the bsis of the set durtion. 16

17 21. Return the tube to its originl position, remove the continer of wter nd close the door. When the door is closed, n utomtic system will utomticlly drw in ny residul wter in the tube to void drips. Preheting stge Steming is lwys preceded by preheting stge, which llows the pplince to het up to cooking temperture. This stge is indicted by progressive increse in the temperture level reched. EN 22. Press the control knob to strt the stem function. At the end of preheting the temperture reches the mximum set level. If progrmmed cooking hs been set (in our exmple ending t 13:30), cooking will strt t time ccording to the set prmeters. Cooking cn be interrupted t ny time by pressing nd holding the control knob for few seconds. Ech time the door is opened, the function in progress will stop nd then utomticlly restrt when the door is closed gin. If cooking hs just been performed with tempertures greter thn 100 C, you must wit for the oven to cool in order to use the stem function. 17

18 A buzzer sounds to indicte tht cooking strts utomticlly. Modifying the set dt During opertion, it is possible to modify the cooking durtion: 23. When the pplince is cooking, press the control knob. 24. Turn the control knob right or left to lter the preset cooking time. If longer length of time is set compred to the previous one, such tht the quntity of wter in the reservoir is insufficient, when the reservoir is empty, the disply will show messge indicting tht wter should be dded. Modifying progrmmed cooking If progrmmed cooking is set, fter modifying the cooking time, the end of cooking time must be re-set. 25. When the pplince is witing to strt cooking, press the control knob. The timed cooking indictor light will strt flshing. 26. Turn the control knob right or left to lter the preset cooking time. 27. Press the control knob gin. The timed cooking indictor light switches off nd the progrmmed cooking indictor light strts flshing. The disply shows the end of cooking time. 28. Turn the control knob to the right or left to dely the end of cooking time. 29. After few seconds the timed cooking nd progrmmed cooking indictor lights stop flshing nd progrmmed cooking restrts with the new settings. 18

19 End of the stem function At the end of the cooking cycle, stem function ended ppers on the disply nd buzzer sounds tht cn be dectivted by pressing the control knob. Removing the residul wter It is recommended to empty the reservoir fter ech cooking cycle in order to prevent residue build up. EN At the end of steming, the pplince prompts for the wter to be emptied from the reservoir. To select nother cooking cycle, turn the control knob to the right or the left. 30. Stnd to the side of the pplince nd open the door jr for few seconds to llow excess stem to escpe. 31. Fully open the door when sfe to do so nd cutiously remove the food from the oven. 32. Remove the cover from the evportion try nd dry it with the sponge supplied. Note: The evportion try cover my be very hot: use pproprite protection. 19

20 33. We recommend positioning the supplied sponge inside the evportion try. 34. Press the control knob to strt emptying the remining wter from the reservoir. When finished, reservoir emptying ended ppers on the disply. 35. Press the control knob to confirm. The residul wter is dischrged into the evportion try: s well s fcilitting removl, this contributes to cooling down the oven more quickly. If the remining quntity of wter is over 500 ml, the wter will be dischrged into the evportion try in two different steps to fcilitte drying. The disply indictes STEP 1, when the first stge hs finished, nd drining will stop. You hve to press the control knob gin to complete the drining with STEP 2. If you do not wish to empty the reservoir, keep the control knob pressed down for few seconds. 36. Squeeze out the wter from the sponge into seprte continer. Tke cre: the wter my be very hot. 37. Also remove condenstion from the bse nd wlls of the oven, the door glss nd drip try nd the front of the pplince. 20

21 Advice for stem cooking Pst nd rice: upon reching 100 C, the cooking time will be the sme s with cooking on hob. Plce the pst or rice in metl try nd cover with round centimetre of wter. For best results when cooking rice, plce lid on the continer or cover with luminium foil. This procedure llows the rice to bsorb ll the wter, nd it cn then be served directly to the tble. Eggs: these my be boiled, scrmbled or poched by using the stem function t 100 C. To obtin perfect boiled eggs, plce them on perforted try nd cook for 4-6 minutes for soft boiled eggs nd 8-10 minutes for hrd-boiled eggs. For scrmbled eggs, plce the beten eggs in metl try together with milk, butter nd sesoning. Cover the try with luminium foil. Mix every couple of minutes using fork. For poched eggs, pour boiling wter into the metl try with drop of vinegr nd stem cook for round 4-5 minutes. Vegetbles: stem cooking vegetbles gives excellent results. They mintin their colour, flvour nd nutritionl properties. For dense vegetbles such s pottoes, turnips nd prsnips, cook t 100 C for the sme length of time s you would boil them for on hob. For broccoli nd crrots, cook for 6 minutes if you wnt them to remin firm, or 10 minutes if you wnt them to be softer. Fish: due to the delicte nture of fish, steming gives excellent results. For oily fish such s slmon or trout, cook t 100 C for round 5 minutes. For white fish such s cod or hddock, cook t 80 C for round 5 minutes. When cooking different foods t the sme time, ll fish should be cooked in the perforted try plced on the lower shelf of the oven in order to prevent the fish juices from dripping onto other foods. Met: this cn lso be stemed, but the use of combined cooking function is preferble in order to obtin nicely browned result. However, stews nd brised met csseroles re perfect for steming. Prepre the met s you would for cooking it normlly in the oven. Plce it in metl try, cover with lid or luminium foil, nd cook for between 45 minutes nd 3 hours depending on the cut of met used. EN 21

22 Thin soups: stem cooking llows flvours to develop perfectly with minimum effort, s the liquids will not boil over. To prepre vegetble soup of just the right consistency, first stem the vegetbles, then dd the stock nd stem t 100 C. The stem function is lso idel for prepring the stock. Soups: Thicker soups re lso esy nd quick to prepre. Plce the soup in metl try, cover with lid or luminium foil nd stem cook t 100 C for the sme time you would cook it in microwve oven. Mix midwy through cooking for cremier consistency. Reheting: using the stem cooking function will not dry foods out nd gives moister result. A previously prepred home-cooked mel, covered with luminium foil, will tke round minutes to rehet. Redy mels will require pproximtely double the time indicted on the pckge. Defrosting: it is possible to use the stem function to defrost foods. Times vry, but defrosting with the stem cooking function tkes round hlf the time necessry for covered foods left to defrost t room temperture. Peeling peppers nd tomtoes: this otherwise time-consuming opertion is very simple when you use the stem cooking function. Use knife to cut smll cross in the skin of the tomto, nd stem cook for 1 minute. Peppers hve tougher skin, nd my require up to 4 minutes to soften them sufficiently for peeling. Chocolte: this cn be melted using the stem cooking function. Plce the chocolte in metl try, cover with luminium foil nd stem cook for 1 minute. Chocolte is unlikely to burn in the stem oven. Hot towels: idel for fcil tretments, close shve or for clening hnds fter mel. They re simple to prepre using the stem function. Moisten towel with wter, roll it up nd stem it for 1 minute. 22

23 Combintion cooking functions Combintion cooking functions re idel for prepring moist ckes nd bred nd for tender rost mets. 1. Press the control knob to ctivte the pplince. 2. From the min menu, turn the control knob to select cooking functions. 3. Press the control knob to confirm the selection. EN Combintion functions list Stem + circulire + fn The combintion of the fn, the circulire heting element nd the stem is prticulrly suitble for prepring rost mets, chicken nd bked goods such s bred nd levened sweets. 4. Turn the control knob to select combintion function. Stem + sttic + fn The opertion of the fn combined with trditionl cooking, with the ssistnce of stem, ensures uniform cooking even with complex recipes. Idel for rost vel, rost duck nd cooking whole fish. 5. Press the control knob to confirm the selected function. The disply shows the screen for setting the prmeters of the selected combintion function. 23

24 6. Turn the control knob to modify the cooking temperture. The lowest temperture tht cn be set is 50 C. The vlue vries by 5 C ech time the control knob is turned. 7. Press the control knob to confirm the cooking temperture set (for exmple 200 C). 8. Turn the control knob in order to chnge the percentge of stem used for cooking. 9. Press the control knob to confirm the percentge of stem tht hs been set (for exmple 50%). 11. Press the control knob to confirm the cooking time set (for exmple 25 minutes). 12. If you wish to set n end of cooking time, turn the control knob to set progrmmed cooking. 13. Press the control knob to confirm the end of cooking time (for exmple 13:30). 14. If you do not wish to set n end of cooking time, wit few seconds. A request to fill the reservoir with wter is shown on the disply. 10. Turn the control knob to modify the cooking durtion. 24

25 15. Fill the reservoir s described in chpter Filling the reservoir. 16. Press the control knob to strt combintion cooking. Press the control knob to strt cooking. EN Preheting stge Combintion functions re lwys preceded by preheting stge, which llows the pplince to het up to cooking temperture. This stge is performed without using stem nd is indicted by the progressive increse in the temperture level reched. At the end of preheting the temperture reches the mximum set level. A buzzer sounds to indicte tht the food to be cooked cn be put in the oven. With trditionl cooking, food cn be plced in the oven immeditely or fter preheting, s the user prefers. Stem percentge Cooking cn be interrupted t ny time by pressing nd holding the control knob for few seconds. 26 Trditionl cooking functions 1. Press the control knob to ctivte the pplince. 2. From the min menu, turn the control knob to select cooking functions. 3. Press the control knob to confirm the selection. 6. The pplince will begin preheting. The disply will show the chosen function, the preset temperture, the current time nd the progress br of the temperture reched (preheting). 4. Turn the control knob to select trditionl function. 5. Press the control knob to confirm the selection. Turn the control knob to chnge the preset temperture. Press to confirm or wit 5 seconds. 26

27 7. When the preheting stge is over buzzer will sound to indicte tht the food cn be plced inside the oven nd cooking will strt utomticlly. To extend the cooking time mnully, press the control knob gin. The pplince will resume its norml opertion with the previously selected cooking settings. Cooking cn be interrupted t ny time by pressing nd holding the control knob for few seconds. For sfety resons, it is not possible to set the end of cooking time by itself without setting the cooking durtion. Trditionl functions list Circulire The combintion of the fn nd the circulire heting element (incorported in the rer of the oven) llows you to cook different foods on severl levels, s long s they need the sme tempertures nd type of cooking. Hot ir circultion ensures instnt nd even distribution of het. It will be possible, for instnce, to cook fish, vegetbles nd biscuits simultneously (on different levels) without odours nd flvours mingling. Grill The het coming from the grill element gives perfect grilling results bove ll for thin nd medium thickness met nd, in combintion with the rotisserie (where fitted), gives the food n even browning t the end of cooking. Idel for grilled cheese nd grtinting. This function enbles lrge quntities of food, prticulrly met, to be grilled evenly. EN Eco The combintion of the fn nd the circulire heting element, in ECO mode, is prticulrly indicted for cooking on single shelf, with reduced power consumption. 27

28 Sttic As the het comes from bove nd below t the sme time, this system is prticulrly suitble for certin types of food. Trditionl cooking, lso known s sttic cooking, is suitble for cooking just one dish t time. Idel for pies, bred nd csseroles. It is lso suitble for ftty met such s duck nd goose. Fn ssisted The opertion of the fn, combined with trditionl cooking, ensures consistent cooking even with complex recipes. Perfect for rosts. Turbo The combintion of fn ssisted cooking nd trditionl cooking llows different foods to be cooked on severl levels extremely quickly nd efficiently, without odours nd flvours mingling. Perfect for lrge volumes tht cll for intense cooking. To obtin rotisserie effect, set the temperture to mximum. When the pplince reches mximum temperture, return the temperture to norml. This procedure sels the liquids inside the met, nd reduces shrinkge. Fn with grill The ir produced by the fn softens the strong hetwve generted by the grill, perfectly grilling even very thick cuts of met such s steks, pork chops etc. Circulire + fn + lower element Fn ssisted cooking is combined with the het coming from below nd llows you to brown food slightly t the sme time. Idel for pies/flns, quiches nd pizz. 28

Modifying the dt set during timed cooking During opertion, it is possible to modify timed cooking durtion: 1. When the symbol is stedy nd the pplince is in the cooking phse, press the control knob. The symbol will strt flshing. 2. Turn the control knob right or left to lter the preset cooking time. Dely cooking Dely cooking is the function which llows cooking opertion to be stopped t n estblished time depending on the time set by the user, fter which the oven will switch off utomticlly. 1. At the end of the cooking cycle, function ended ppers on the disply nd buzzer will sound tht cn be dectivted by pressing the control knob. EN 5. Bsed on the vlues set, the pplince will strt preheting of pproximtely 10 minutes. To extend the cooking time mnully, press the control knob gin. The pplince will resume its norml opertion with the previously selected cooking settings. For sfety resons, it is not possible to set the cooking end time by itself without setting the cooking durtion. 31

32 Modifying the dt set during progrmmed cooking After modifying the cooking durtion, the end of cooking time must be re-set. During opertion, it is possible to modify progrmmed cooking durtion: 1. When the symbols nd re lit stedily nd the pplince is witing for cooking to strt, press the control knob. The symbol will strt flshing. 2. Turn the control knob to lter the previously set cooking time. 3. Press the control knob gin. The symbol switches off nd strts flshing. The disply shows the cooking end time. 4. Turn the control knob to dely the cooking end time. 5. After few seconds the symbols nd stop flshing nd progrmmed cooking restrts with the new settings. If the cooking durtion is chnged, the cooking end time is deleted. 3.5 Cooking dvice To sve energy Reduce ny opening of the door to minimum to void het dispersl. Keep the inside of the pplince clen t ll times. Generl dvice It is not possible to shorten cooking times by incresing the temperture (the food could be overcooked on the outside nd undercooked on the inside). Cooking times vry ccording to the thickness nd the qulity of the food nd to consumer tste. The first few times you use the pplince, until cquiring sufficient confidence nd knowledge of the required cooking times, we suggest setting slightly longer cooking times nd testing the food quickly little before cooking ends. If it is not redy, it is nywy possible to continue to cook it using the remining cooking time nd without hving to dd more wter to the reservoir. If, however, the food is lredy cooked, it will be possible to immeditely stop cooking nd drin the residul wter from the reservoir. Advice for cooking desserts/pstries nd biscuits Use drk metl moulds: They help to bsorb the het better. 32

33 Advice for stem cooking Cooking times depend on the density of foods nd not their quntity. For exmple, one piece of broccoli will tke the sme time s 20 florets. Incresing the quntity of csserole lso increses its density, nd so the cooking time will lso increse. Where possible, use perforted continer to llow the stem to circulte round the food from ll sides. Stem cooking significntly reduces the migrtion of flvours between different foodstuffs. However, lwys mke sure tht the foods cooked in perforted continer, such s fish, re lwys plced on the bottom of the oven. If there is possibility tht the stem might chnge the consistency of the food during cooking (for exmple in csseroles, puddings...) lwys cover them with luminium foil. 3.6 Specil functions The specil functions menu contins some functions like the timer with the oven off, defrosting or clening functions, etc. List of specil functions Empty reservoir This function llows you to empty the reservoir. Clen reservoir This function llows you to clen the reservoir. (See Clening nd mintennce ). Descling This function llows you to descle the oven. (See Clening nd mintennce ). Timer This function sounds buzzer when the time set hs elpsed. Defrost by weight This function defrosts foods on the bsis of the type nd weight of the frozen product. Defrost by time This function llows you to defrost food on the bsis of selectble time. EN Proving The proving function, using the het coming from the top, mkes it possible to prove ll types of dough, gurnteeing perfect results quickly. 33

34 Rehet This function llows you to rehet previously cooked food kept cool or in the refrigertor. Empty reservoir 1. Turn the control knob to the right or left to select empty reservoir mode from the specil functions menu. Sbbth This function llows food to be cooked in ccordnce with the provisions of the Jewish religion dy of rest. Vpor Clen This function fcilittes clening using the stem produced by smll quntity of wter poured onto the bottom of the oven. (See Clening nd mintennce ). 2. Press the control knob to confirm. 34

35 3. Remove the cover from the evportion try nd dry it with the sponge supplied. The residul wter is dischrged into the evportion try: s well s fcilitting removl, this contributes to cooling down the oven more quickly. EN If the remining quntity of wter is over 500 ml, the wter will be dischrged into the evportion try in two different steps to fcilitte drying. The disply indictes STEP 1, when this finishes, drining will stop. You hve to press the control knob gin to complete the drining with STEP 2. Note: The evportion try cover my be very hot: use pproprite protection. 4. We recommend positioning the supplied sponge inside the evportion try. 5. Press the control knob to strt emptying the remining wter from the reservoir. When finished, reservoir emptying ended ppers on the disply. 6. Press the control knob to confirm. If you do not wish to empty the reservoir, keep the control knob pressed down for few seconds. 7. Squeeze out the excess wter into seprte continer. Tke cre: the wter my be very hot. 35

39 Proving For successful proving, continer of wter should be plced in the bottom of the oven. 4. The pplince will begin preheting. EN 1. Position the dough to prove on the second level. 2. Turn the control knob to the right or left to select proving from the specil functions menu. Then press it to confirm. 5. It will then proceed with the selected function. 3. Press the control knob to strt the function. While the function is in progress, it is possible to set timer for mximum of 4 hours (see Timer during function ), proving durtion (see Timed cooking ) or delyed proving (see Dely cooking ). 39

At the end of the function, function ended ppers on the disply nd buzzer will sound tht cn be dectivted by pressing the control knob. 3. Press the control knob to confirm. When using the proving function the temperture cnnot be ltered. 4. Turn the control knob to modify the reheting durtion. 5. Press the control knob to confirm the prmeters nd strt reheting. 40

41 Sbbth This function results in the pplince operting in prticulr wy: Cooking cn proceed indefinitely, it is not possible to set ny cooking durtion. No preheting will be performed. The cooking temperture which cn be selected vries between C. The oven light remins turned off, ny ction such s opening the door or mnully ctivting the oven does not turn the lmp on. The internl fn remins turned off. Knob illumintion nd udible prompts remin disbled. After ctivting the Sbbth function the settings cnnot be ltered. Any ction on the knobs will produce no effect; only the control knob remins ctive to llow you to return to the min menu. 1. Turn the control knob to the right or left to select sbbth from the specil functions menu. Then press it to confirm. 2. Turn the control knob to the right or left to chnge the heting temperture. 3. Press the control knob to confirm the prmeters nd strt the Sbbth function. 4. When finished, press nd hold the control knob for t lest 5 seconds to return to the min menu. EN 41

42 3.7 Preset recipes This mode llows you to select previously stored progrm for cooking food. The pplince will utomticlly clculte the optimum cooking prmeters bsed on the weight entered. 3. Select the type of cooking (where possible, depending on the dish chosen) nd press the control knob to confirm. 4. Turn the control knob to select the weight of the dish. Strting preset recipe 1. Turn the control knob to the right or left to select the required type of dish from the preset recipes menu. Then press it to confirm. 5. At this point it is possible to strt the selected preset recipe, permnently modify the settings or perform dely cooking. 2. Select the sub-type of dish to cook nd press the control knob to confirm. If you select the strt option, when you re using the stem or combintion cooking function, request to fill the reservoir with wter ppers on the disply (see Filling the reservoir ). 42

43 6. Cooking will strt with the preset recipe s predefined settings nd the disply will show ll the prmeters set. 2. To perform new cooking cycle using the sme prmeters s re currently set, press the control knob (press the knob twice if the buzzer is ctive). The pplince will utomticlly restrt cooking if it is t the correct temperture; otherwise it will lso resume preheting. EN The time shown does not include preheting time. Some predefined cooking prmeters cn be chnged t ny time, even fter cooking hs strted. Preset recipe end 1. When the preset recipe hs finished, the pplince will wrn the user with buzzers nd the flshing symbol. Cooking in sequence is useful to cook multiple dishes of the sme type. For exmple, it cn be used to cook severl pizzs in row. It is not recommended to plce the dish in the oven during the utomtic pre-het stge. Wit for the specific messge. 3. Press the return knob to exit nd end the preset recipe. Chnging preset recipe permnently 1. Inside the selected preset recipe, turn the control knob to the left or right to select chnge from the menu of the selected dish. Then press it to confirm. 43

Press the return knob to confirm. To confirm ctivtion of the controls lock, select YES. During norml opertion it is indicted by the indictor light coming on. To temporrily relese the lock during cooking, hold the return knob down for 3 seconds. One minute fter the lst setting the lock will become ctive gin. If the control nd return knobs re touched or chnge position, the disply will show wrning for two seconds. 56

57 Demo mode (for showrooms only) This mode llows the pplince to dectivte ll heting elements, while keeping the control pnel ctive. Eco-Logic This mode llows the pplince to limit the power used. Suitble for simultneous use with further home pplinces. If this option is enbled, the symbol will pper on the disply. EN To confirm ctivtion of demo mode, select YES. To confirm ctivtion of eco-logic mode, select YES. If the mode is ctive, demo mode will be shown on the disply. To disble sounds when the knobs re pressed, select NO. To confirm ctivtion of keep wrm mode, select YES. 58

To stop the pplince from utomticlly dectivting the light fter one minute, set this mode to OFF. The mnul on/off control is lwys vilble with both settings by turning the return knob to the right. 60 Wter hrdness The pplince is fctory preset for medium wter hrdness index (3). This mode llows you to set the wter hrdness vlue in order to optimise the descling process. Depending on the wter hrdness vlue tht hs been set, fter the stem function hs been used for certin number of hours, the disply will prompt you to crry out the descling procedure (see Descling ). 1. Turn the control knob right or left to set the correct wter hrdness. 2. Press the control knob to confirm. 61 Clening nd mintennce 4 Clening nd mintennce 4.1 Instructions Improper use Risk of dmge to surfces Do not use stem jets to clen the pplince. Do not use clening products contining chlorine, mmoni or blech on prts mde of steel or tht hve metllic surfce finishes (e.g. nodizing, nickelor chromium-plting). Do not use brsive or corrosive detergents (e.g. scouring powders, stin removers nd metllic sponges) on glss prts. Do not use rough or brsive mterils or shrp metl scrpers. Food stins or residues Do not use steel sponges nd shrp scrpers s they will dmge the surfce. Use norml, non-brsive products nd wooden or plstic tool, if necessry. Rinse thoroughly nd dry with soft cloth or microfibre cloth. Do not llow residues of sugry foods (such s jm) to set inside the oven. If left to set for too long, they might dmge the enmel lining of the oven. 4.3 Removing the door For esier clening it is recommended to remove the door nd plce it on te towel. To remove the door proceed s follows: 1. Open the door completely nd insert two pins into the holes on the hinges indicted in the figure. EN Improper use Risk of dmge to the pplince Do not remove the sel on the fce of the oven. 4.2 Clening the surfces To keep the surfces in good condition, they should be clened regulrly fter use. Let them cool first. Ordinry dily clening Alwys use only specific products tht do not contin brsives or chlorine-bsed cids. Pour the product onto dmp cloth nd wipe the surfce, rinse thoroughly nd dry with soft cloth or microfibre cloth. 61

Grsp the door on both sides with both hnds, lift it forming n ngle of round 30 nd remove it. 4.4 Clening the door glzing The glss in the door should lwys be kept thoroughly clen. Use bsorbent kitchen roll. In cse of stubborn dirt, wsh with dmp sponge nd n ordinry detergent. We recommend using clening products distributed by the mnufcturer. 3. To ressemble the door, put the hinges in the relevnt slots in the oven, mking sure tht grooved sections A re resting completely in the slots. Lower the door nd once it is in plce remove the pins from the holes in the hinges. 4.5 Removing the internl glss pnes For esier clening the internl glss pnes of the door cn be removed. 1. Open the door. 2. Remove the internl glss pne by pulling the rer prt gently upwrds, following the movement indicted by the rrows (1). 3. Then, pull the front prt upwrds (2). This wy, the 4 pins ttched to the glss detch from their housings in the oven door. 62

Descling The presence of scle due to lck of descling cn compromise correct opertion of the pplince in the long term. The following indiction will periodiclly pper on the pplince's disply, notifying you tht it is necessry to perform descling of the evportion try on the bse of the oven: The oven should be operted t the mximum temperture for bout minutes fter the use of specific products, to burn off the residues left inside the oven. 1. Press the control knob to ccept the descling procedure. For esier clening, remove the door. 2. Open the door completely. 64

65 Clening nd mintennce 3. Pour pproximtely 250 ml of white vinegr into the evportion try, thus lso covering prt of the bse of the oven. 7. When you hve finished clening, close the door gin. We recommend performing descling every time this is indicted on the disply in order to keep the boiler in perfect operting condition. EN 4. Press the control knob to strt the descling procedure. Note: The descling process cn be skipped three consecutive times. 5. At the end of the descling process, remove the vinegr from the bse of the oven with the supplied sponge. After this, the pplince will not llow you to run ny other function until the descling process is performed. 6. Use dish sponge on softened encrusttions in order to remove the lrgest possible quntity of scle. 65

66 Clening nd mintennce Mnul descling When you wish to perform descling in dvnce, you cn run the function mnully: 1. Turn the control knob to the right or left to select descling from the specil functions menu. Then press it to confirm. Removing rcks/trys support frmes Removing the guide frmes enbles the sides to be clened more esily. To remove the guide frmes: 1. Unscrew the frme fstening pins. 2. Proceed with the procedure described in the Descling chpter, beginning t point Pull the frme towrds the inside of the oven to free it from the fstening pins. 3. When clening is complete, repet the bove procedures to put the guide frmes bck in. 66

67 Clening nd mintennce 4.7 Clening the reservoir To gurntee optimum performnce of your pplince, we recommend clening the reservoir every 2-3 months. 1. Turn the control knob to the right or left to select clen reservoir from the specil functions menu. 4. Open the oven door. 5. Rest the continer on the open door. Note: the continer with the solution must hve gross weigh lower thn 5 kg. 6. Extrct the tube from its set nd immerse its end in the continer until it reches ll the wy to the bottom. EN 2. Press the control knob to confirm the choice of function. The disply will show request to fill the reservoir. 3. Fill continer (e.g. jug) with solution of wter nd citric cid. We recommend mixing 30 g of citric cid with 1.5 litres of wter. 67

68 Clening nd mintennce 7. Press the control knob to strt filling the reservoir with the solution. 9. Return the tube to its originl position, remove the continer of solution nd close the door. When the door is closed, n utomtic system will utomticlly drw in ny residul solution in the tube to void drips. The pplince will utomticlly drw sufficient solution to fill the reservoir. 10. Press the control knob to strt the reservoir clening procedure. The disply will show the time left until the end of the clening cycle. If wter remins in the reservoir for longer thn 24 hours, messge ppers on the disply requesting you to drin the reservoir. 8. When the pplince hs finished tking in wter, shke the tube to remove ny residul wter. When the clening process is complete, buzzer will sound nd the disply will show the solution drining screen. 68

69 Clening nd mintennce 11. Remove the cover from the evportion try nd dry it with the sponge supplied. The residul solution is dischrged into the evportion try. Becuse the quntity of solution remining is greter thn 500 ml, dringe of the solution into the evportion try will tke plce in two different steps in order to fcilitte drying. The disply indictes step1 of 2 fter completion of which, dringe stops. You hve to press the control knob gin in order to complete the dringe with step 2. When finished reservoir clening complete ppers on the disply. EN 12. We recommend positioning the supplied sponge inside the evportion try. 13. Press the control knob to strt emptying the remining solution from the reservoir. 14. Use the supplied sponge to remove the residul solution from the evportion try. 15. Press the control knob to exit from the reservoir clening procedure. After hving clened the reservoir with the solution of wter nd citric cid, crry out t lest one clen reservoir cycle using ordinry wter in order to rinse out ny residues there my be from the reservoir. 69

70 Clening nd mintennce 4.8 Vpor Clen Vpor Clen is n ssisted clening procedure which fcilittes the removl of dirt. Thnks to this process, it is possible to clen the inside of the oven very esily. The dirt residues re softened by the het nd wter vpour for esier removl fterwrds. Improper use Risk of dmge to surfces Remove ny food residues or lrge spills from previous cooking opertions from the inside of the oven. Crry out ssisted oven clening opertions only when the oven is cold. Spry wter nd wshing up liquid solution inside the oven using spry nozzle. Direct the spry ginst the side wlls, upwrds, downwrds nd towrds the deflector. Close the door. We recommend sprying pprox. 20 times t the most. Preliminry opertions Before strting the Vpor Clen cycle: Completely remove ll ccessories from inside the oven. Pour pprox. 40 cc of wter onto the floor of the oven. Mke sure it does not overflow out of the cvity. 70

71 Clening nd mintennce Vpor Clen cycle setting If the internl temperture is greter thn tht required for the Vpor clen function, the cycle will be stopped immeditely nd Internl temperture unsfe, plese wit until the oven is cool will pper on the disply. Leve the pplince to cool down before ctivting the ssisted clening cycle. 3. Press the control knob twice to strt the clening cycle. 4. A buzzer will indicte the end of the vpor clen cycle. EN 1. Turn the control knob to the right or left to select the vpor clen function from the specil functions menu. 2. Press the control knob to confirm. The durtion nd temperture of the clening cycle will pper on the disply. The durtion nd temperture prmeters cnnot be chnged by the user. Setting the progrmmed Vpor Clen cycle It is possible to progrm the vpor clen cycle strt time, like ny cooking function. 1. After selecting the vpor clen specil function, press the control knob. The disply shows the current time nd the symbol comes on. 2. Turn the control knob to set the time you wish the vpor clen cycle to finish. 3. After few seconds, the symbols nd remin lit stedily nd the pplince wits for the set strt time to strt the clening cycle. 71

72 Clening nd mintennce End of the Vpor Clen cycle 1. Open the door nd wipe wy the less stubborn dirt with microfibre cloth. 2. Use non-scrtch sponge with brss filments on hrd to remove deposits. 3. In cse of grese residues use specific oven clening products. 4. Remove the wter left inside the oven. 5. For improved hygiene nd to void food being ffected by ny unplesnt odours, we recommend tht the oven is dried using fn ssisted function t 160 C for pproximtely 10 minutes. We recommend wering rubber gloves for these opertions. 4.9 Extrordinry mintennce Live prts Dnger of electrocution Unplug the pplince. Replcing the internl light bulb 1. Completely remove ll ccessories from inside the oven. 2. Remove the rck/try support frmes. 3. Remove the bulb cover using tool (e.g. screwdriver). Py ttention not to scrtch the oven cvity enmel. We recommend removing the door in order to mke the mnul clening of the prts tht re difficult to rech esier. 72

73 Clening nd mintennce 4. Slide out nd remove the light bulb. Do not touch the hlogen light bulb directly with your fingers, but wrp it in insulting mteril. 5. Replce the light bulb with one of the sme type (40W). 6. Refit the cover. Ensure the moulded prt of the glss (A) is fcing the door. Wht to do if... The disply is completely off: Check the mins power supply. Check whether n omnipolr switch upstrem of the pplince supply line is in the ON position. The pplince does not het up: Check whether it hs been set in demo mode (for further detils see Demo mode (for showrooms only) ). The controls do not respond: Check whether it hs been set in controls lock mode (for further detils see Controls lock ). If the problem hs not been resolved or in the cse of other types of fult, contct your locl technicl support centre. EN If other ERRx error messges re indicted: Note down the error messge, function nd set temperture nd contct your locl technicl support centre. 7.
