The fire is small and cntained in the area where it started. The fire department has been called. Yu can fight the fire with yur back t the exit. ELECTRICAL SAFETY: Electrical Requirements and Grunding Instructins NOTE: ALL MODELS. IN CASE OF AN ELECTRICAL FAILURE If fr any reasn a gas cntrl knb is turned ON and there is n electric pwer t perate the electrnic igniters n the range burners, turn OFF the gas cntrl knb and wait 5 minutes fr the gas t dissipate befre lighting the range burner manually. T light the range burners manually, carefully hld a lighted match t the burner prts and turn the gas cntrl knb t Hl. During a pwer failure, yu can manually light the range burners with a match. Nte: The gas Grill, and Therm-griddle'"' CANNOT be lit manually during a pwer failure. 4

If yu smell gas, yur installer must check fr leaks. If the cnnectins are nt perfectly tight a small leak may ccur allwing gas drs t be detected. Finding a gas leak is nt a "d-it-yurself" prcedure. Sme leaks can nly be fund with the burner cntrl in the "ON" psitin and must be perfrmed by a qualified service technician. 7. In the event a burner ges ut and gas escapes, pen a windw r dr immediately. DO NOT attempt t use the range until the gas has had time t dissipate. Wait at least 5 minutes befre using the range again. 8. T avid electric shck hazard, d nt install this appliance utside r near water. D nt install r use this appliance if it has been expsed t water. 9. If the range is near a windw, be certain the curtains d nt blw ver r near the range burners, griddle r briler sectin; they culd catch fire and cause serius damage and injury. 10. Sme synthetic materials are highly flammable and shuld nt be wrn while cking. 22. D nt use the ven fr strage. 23. D nt tuch the interir surfaces f the ven during use. After use, make sure these surfaces have had sufficient time t cl befre tuching them. 24. DO NOT TOUCH THE BURNER GRATES OR THE IMMEDIATE SURROUNDING AREAS adjacent t the burners. When in use these areas may becme /ht enugh t cause burns. 25. NEVER leave the range unattended when using high flame settings. Bil-vers cause smking and greasy spills that may ignite. ONLY certain types f glass, heat prf glassceramic, ceramic earthenware r ther glazed utensils are suitable fr range use. Other types f utensils may break with sudden temperature changes. Use nly n lw r medium heat settings accrding t the utensil manufacturer's directins. 30. GREASE IS FLAMMABLE. Let ht grease cl befre attempting t handle it. Avid letting grease depsits t cllect. Clean after each use. 36. KEEP BURNER PORTS CLEAN. This is essential fr prper lighting and maintenance f the burners. It is necessary t clean the burner prts when there is a bil ver r when the burner des nt light thugh the electrnic igniters click. 37. CLEAN THE RANGE-TOP SECTION WITH CAUTION. Avid steam burns; d nt use a wet spnge r clth t clean the range while it is ht. Sme cleaners prduce nxius fumes if applied t a ht surface. Fllw directins prvided by the cleaner manufacturer. 38. BE SURE ALL RANGE CONTROLS ARE TURNED OFF and the range is cl befre using any type f aersl cleaner n r arund the range. The chemical that prduces the spraying actin culd, in the presence f heat, ignite r cause metal parts t crrde. Only an authrized service technician shuld perfrm Service. Technicians must discnnect the pwer supply befre servicing this unit. 39. CLEAN THE VENTILATION HOOD and filters abve the range frequently s grease depsits frm cking vaprs d nt accumulate n them. 40. The unit must be installed in manner which will keep the area belw the dr unbstructed t allw free air flw. 49. Only clean parts as listed in the Use and Care Manual. 50. D nt clean the ven dr gaskets. The dr gaskets are essential fr a gd seal f the ven. Care is t be taken during cleaning t prevent rubbing, damaging, r mving the gasket frm its installed psitin. 51. Prir t self-cleaning the range, remve briler pans, pts, ther utensils and wipe up excess spillage. 52. INSTALL A SMOKE DETECTOR in r near the kitchen. 43. D nt heat unpened fd cntainers (baby fd jars, and cans). Pressure can build up and may cause the cntainer t burst and cause injury. 44. It is als used t lck and unlck the cntrl panel when desired. Dual Oven Ranges (48 and 60 ) have a LEFT CANCEL and RIGHT CANCEL buttn, which will cancel the specified ven functin. Turns the Cnvectin Fan On r Off when cking fr cnvectin mdes. Cnvectin will nt functin during Pre-Heat and Perfect Cnvectin during which the fan is always On, r during Self-Clean, during which the fan is disabled. This buttn is lit when ON. Turns the Rtisserie mtr On and Off. This buttn is lit when ON. (Only prvided n the primary ven) Turns the Mist functin On and Off during cking mdes. This buttn is lit when ON. (Only prvided n the primary ven) Press t set the Meat Prbe functin which mnitrs the internal fd temperature and will turn the ven ff when the fd is dne. The Icn will nly light when PROBE is selected. Press t set the Time f Day clck Starts selected Mde, Timer r Temperature Adjustment Turns the ven lights ON and OFF (turns lights in bth vens f a duble ven range ON r OFF when pressed) Selects Timer 1 r 2. Als used t display Timer 1 r 2 if a timer is active and a separate functin is being displayed. Press t set the Delay Ck functin. When set the ven will turn n at a later set time Press t set the Timed Ck functin. When set the selected ven will turn OFF after a set amunt f time This Dial is pressed t activate the Mde selectin functin and rtated t cycle thrugh the mdes This Dial is pressed t activate the Temperature adjustment functin when a cking mde is active and rtated clckwise t increase the temperature r time setting r cunter clckwise t decrease the temperature r time setting. The LEFT and RIGHT buttns are used t select an ven t set, adjust, r check. 12 RANGE FEATURES DEFINED 1. Mde Icns: A light abve the selected Mde will illuminate t shw which ven mde is being used. All lights (except PROBE) will light up when Mde selectin is started. A single mde will be highlighted when the Mde Selectr Dial is rtated and Mde is selected. 2. Range Tp Grates Prfessinal style heavy duty prcelain cated cast irn grates are easy t clean and securely hld all sizes f pts and pans t prvide a stable cking surface. 3. Mde Dial / Buttn On a 30 r 36 Range the Mde Dial / Buttn will begin Mde selectin when pressed nce. Rtate the dial t tggle between mdes. 48 and 60 Ranges require either the RIGHT r LEFT ven t be selected by pressing the desired buttn, prir t using the Mde dial t select a Mde. 4. Clck and Temperature / Functin Display Displays the Time f Day when the ven r Timers are nt in use. A single ven will display the set temperature n the right side f the Time. A 48 r 60 Range will display RIGHT Oven Temperature n the RIGHT and LEFT Oven Temperature n the LEFT f the Time display. Other ven status icns will als be displayed in this area during ven use. 5. Dr Latch The Dr Latch lcks the dr during the Self Clean cycle fr safety. 6. Time / Temperature Adjustment Dial / Buttn The Time / Temperature Adjustment Dial / Buttn will allw adjustment f the set temperature, time f day, r timer settings when rtated. The temperature adjustment mde can be entered by pressing the dial while the ven is in peratin (except fr Self-Clean) then rtating t change the temperature. 7. Bril Element A high intensity dual ribbn briler is lcated under glass at the tp f the ven. 8. Range Tp Burner Knb Heavy Duty Cast Chrme Plate knbs with Stay Cl inserts fr easy cmfrtable adjustment f the burner flames frm High t Simmer 9. Temperature Sensr The temperature sensr reads the ven temperature 10. Cntrl Panel Buttns The Cntrl Panel is a smth glass panel with buttn areas indicated by vals. The buttn functins are activated by a light tuch. The CONVECTION, ROTISSERIE, and MOIST buttns will illuminate when these functins are active. 11. Dr Gasket (Upper) The Dr Gasket is used t retain heat within the ven 12. Spill Tray Handle Open Burners, Griddles, and BBQ Burners have an easy slide spill tray n rller bearings fr access t the spill pans fr cleaning. Sealed burners have a nn-mvable sectin. 13. Rtisserie Frk Tw Rtisserie Frks are prvided with the range and are used t secure fd t the Rtisserie Spit Rd during cking. 14. Meat Prbe Scket Lcated abve the tp rack in the upper right frnt f the ven (Primary Oven) and upper left frnt in a secndary ven. This scket is where the meat prbe is plugged in. The meat prbe cnstantly measures the temperature f large meat r pultry dishes and changes the ven Mde setting int Hld when the fd is cked. 11

13 RANGE FEATURES DEFINED (cntinued) 15. Rtisserie Spit Rd The Rtisserie Spit Rd is used in cmbinatin with the Rtisserie Frks t hld fd when cking in Rtisserie mde. 16. Meat Prbe The Meat Prbe plugs int the Meat Prbe Scket in the wall f the ven and int the fd being cked. The Meat Prbe can then be set t the desired fd temperature fr cking. 17. Oven Light Tw high intensity lights are prvided inside each ven and are lcated t give maximum illuminatin thrughut the cking area. 18. Cnvectin Baffle The cnvectin baffle is munted t the back f the ven and cvers a cncealed heating element. The baffle is designed t evenly distribute heated air inside the ven. 19. Evapratin Tray Used when the Mist cking feature is active, the Evapratin Tray is a stainless steel tray munted inside the ven belw the cnvectin baffle. Rtisserie Spit Rd The Rtisserie Spit Rd is a heavy duty stainless steel rd used t hld fds fr Rtisserie cking. 21. Bake Elements (Under Glass) Dual Bake Elements are lcated under black Ceran glass fr even heating and easy cleaning. 22. Rtisserie Mtr The rtisserie mtr is lcated in the right rear f the Primary ven. The square pinted end f the Rtisserie Spit Rd is placed int the receptacle and the ppsite end is secured in the frnt bracket fr delicius rtisserie cking. 23. Hinge Receptacle The hinge receptacles hld the ven drs in place. 24. Mist Water Orifice Lcated behind the Evapratin Tray, the Mist Water Orifice cntrls the amunt f water released by the system and shuld nt be remved. 25. Oven Heat Vent Cl air circulates thrugh the ven dr t keep it cl during cking and ht air is exhausted thrugh the Oven Heat Vent at the bttm f the ven. CAUTION: D nt blck r bend this area when the ven is in use r during installatin. 26. Dr Gasket (Lwer) The Dr Gasket is used t retain heat within the ven 27. EZ-Glide Rller Rack (nt pictured) Three EZ-Glide ven racks are prvided with each ven. Rllers n each rack prvide smth mvement when cking r checking fd. The rllers are n hinged brackets making it easy t insert and remve the racks frm the ven. The EZ-Glide rack design allws the full width f the ven t be used when cking. 28. Serial Number Label (nt pictured) Lcated behind the Primary Oven dr n the Stainless steel frnt panel, the Serial Number Label lists the mdel and serial number. The Serial Numbers is required fr any service r warranty calls. 29. Water Reservir Access (see diagram n page 9) Prvides access t the remvable water reservir fr use with the Mist cking mde t fill, empty and clean 12

14 USING YOUR RANGE INITIAL OVEN SETUP CLOCK When pwered up and prir t pressing any buttns the clck will flash 12:00 and will increase each minute. T set the ven clck press the CLOCK buttn n the cntrl panel nce. The clck will blink indicating it is ready t be set and the AM r PM icn will be displayed. Set the crrect time by rtating the TEMP/TIME knb n the right side f the cntrl panel clckwise t increase the time and cunter clckwise t decrease the time. Once the present time has been selected, press the START buttn t set the time. A 12 hur clck display is the default but may be changed. If a 24 hur military type clck display is desired, press and hld the CLOCK buttn fr 6 secnds. 12 hr r 24 hr will be displayed and can be tggled by pressing the TIME/TEMP knb. Press START t select the desired display type. Nte: AM r PM will nly be displayed when using the standard 12 hur clck display FAHRENHEIT OR CELSIUS TEMPERATURE DISPLAY Temperature is displayed in Fahrenheit as a default but may be changed t Celsius if desired. T change the temperature readut t degrees Celsius select the BROIL mde and set it t HIGH. Start the mde and press and hld the TIME/TEMP buttn fr 6 secnds. F (Fahrenheit) will be displayed as the current mde as a factry default. It can be tggled t C (Celsius) by pressing the TEMP/TIME knb. Press START t select the desired mde. CONTROL BEEPER An audi beeper is used t indicate presses f the cntrl, indicate alarm expiratin, end f cycles, etc. The beeper may be disabled if desired. T disable the beeper, press and hld the DELAY COOK buttn fr 6 secnds. On r Off will be displayed (On is the default). The state f the beeper can be tggled by pressing the TEMP/TIME knb. Press START t select. OVEN LIGHTS Oven lights may be turned On and Off by pressing the LIGHT buttn n the cntrl panel. If yur mdel has tw (2) vens (48 r 60 ranges) pressing the LIGHT buttn will turn the lights fr BOTH the Right and Left vens On and Off. 13

15 OVEN HEATING MODES DEFINED Yur Oven features cking mdes fr practically all frms f hme cking. PRE-HEAT Mst recipes call fr an ven t be heated t a particular temperature befre yu start cking. This heating f the ven is the Pre-Heat mde and uses high intensity heat frm the tp, bttm, and rear f the ven t quickly and evenly heat the ven. The Cnvectin Fan is als used during Pre-Heat t rapidly distribute the heat thrughut the ven. The same heating is used fr Rapid Recvery when the ven temperature is reduced by ver 100 F frm the ven setting. NOTE: Due the high intensity heat generated during Pre-Heat, fd shuld NOT be placed in the ven until the ven indicated Pre-Heat is cmplete. This will be indicated by the PRE icn turning ff and a beep tne by the ven t indicate the set temperature has been achieved. NOTE: BAKE Fr Best Results - If cking delicate items r recipes that ck in less than ½ hur, it is recmmended the ven be allwed t heat fr an additinal 15 minutes r mre. When the Range cntrl signals the end f the pre-heat cycle the air in the ven has been heated t the set temperature but each ven is made f lbs. f steel and glass and will require the additinal time t allw even heating at the set temperature. N additinal time is required when cking large items that take 45 minutes r mre t ck. The mst traditinal type f ven heating, Bake heats acrss the entire bttm f the ven. DELICATE BAKE Delicate Bake is very similar t Bake and als heats frm the ven bttm but Delicate Bake generates mst heat arund the uter edge f the ven bttm. Perimeter heating helps prevent scrching f delicate items that can ccur when using the mre intense standard Bake. BROIL Bril uses the tp element which rapidly generates searing heat desired fr cking steaks, chps, sme fish, and fr tasting breads. Carefully select the distance frm the Briler glass t prevent vercking r burning fds. PERFECT CONVECTION Perfect Cnvectin uses n direct heat but heats the air being mved arund the ven with a cncealed Cnvectin Element behind the Cnvectin Baffle. This is a gd general cking mde and als used fr multi rack cking since it cks fd indirectly by heating and mving the air in the ven preventing ht spts. CONVECTION COOKING All cking mdes can als be Cnvectin Cking mdes by activating the CONVECTION buttn which turns n the Cnvectin Fan. This will circulate the heated air thrughut the ven and mre evenly distribute heat. Sme traditinal dishes that desire a bttm crust shuld nt use the Cnvectin ptin t allw the bttm heat t create the crust. NOTE: Cnvectin cking reduces ck times by 10% and reduces the cking temperature by apprximately 25 degrees. ROAST Rast uses bth tp and bttm heat t imprve searing f large meat and pultry items. Mre heat is generated at the bttm f the ven when rasting due t the cmmn use f heavy rasting pans. 14

16 OVEN HEATING MODES DEFINED (cntinued) SELF CLEAN Self Clean is a special heating functin that raises the ven temperature t levels that will burn mst fd byprducts t ash. It is a 3 hur heating cycle but due t the extreme heat generated, the ven dr is autmatically lcked when the cycle is started. Daily ven cleaning can be accmplished with mild detergent and water with a nn-abrasive spnge but a Self Clean cycle perfrmed nce r twice a year r after particularly high splatter cking will eliminate unseen build up within the ven and reduce the generatin f smke during cking. HOLD The HOLD functin is autmatic and is entered when a Timed Ck r Meat Prbe functin has been cmpleted. HOLD will reduce the ven temperature setting t 150 F using the perimeter Bake heating element t sustain the temperature while reducing the cncentratin f heat. The HOLD mde is timed fr 2 hurs. NOTE: Fd shuld nt remain in the ven after the HOLD functin has ended. Fd safe temperature has been established at 140 F belw which bacteria will grw. OVEN USE (Befre Cking) WARNING: WARNING: WARNING: D nt line the ven bttm with fil r cver it with any material. Yur ven has been manufactured fr easy cleaning f spills and siling. Lining with fil r cvering will negatively affect the cking perfrmance f yur ven and may cause fire hazards. Psitin ven racks when the ven is cl. If the ven is ht and racks must be repsitined, always use clean, dry pt hlders t prevent steam burns. T prevent unnecessary drs, always clean large spills r fd particles frm the ven prir t heating. PREPARATION Befre yu start cking, prepare the fllwing: MANAGE YOUR TIME: Check timing fr preparatin and cking f all dishes prir t starting fr gd meal planning. PREPARE: Have yur fds, ingredients, spices, etc, ready and all required tls handy (ven mitts, tngs, spns, basting brushes, etc.) KNOWLEDGE: Knw yur recipe and have it handy fr reference. Knw yur set temperature, apprximate cking time (and fd weight if time is weight based), internal dneness temperature. BE READY: Prepare an area fr ht fds ut f the ven. Gd preparatin can prevent injury, damage, r ther mishaps. POSITIONING OVEN RACKS Yur ven cmes with Capital Rller Racks which effrtlessly mve in and ut f the ven n bearing rllers. T cmpletely remve a rack frm the ven, befre the ven is ht, grasp the rack n bth the right and left sides and lift the rack up while allwing the rller brackets t rtate dwnward. This will release the rack frm the retaining grves in the ven side wall. T insert a rack, determine the desired rack psitin and, with the rller brackets facing dwn, place the rack int the ven at the desired height. Rtate the rller brackets up twards the walls f the ven while psitining the wheels within the desired psitining grves. Make sure all fur rllers are seated within the grves fr a secure rack psitin. 15

17 SETTING THE OVEN Knw which ven mde is t be used and the temperature setting. DOUBLE: If setting a Duble Oven either the RIGHT r LEFT ven must be selected by pressing ne f the cntrl panel buttns. The selected ven buttn will be indicated by a small light in the center f the buttn. Each ven must be set separately and can use independent mdes. If SELF CLEAN is used in either ven, the ther ven will nt be functinal until the SELF CLEAN cycle is cmplete. Press the MODE dial t start MODE selectin. All MODE icns will illuminate. Rtate the MODE dial t tggle between mdes. Mdes will change frm tp t bttm when the dial is turned clckwise and bttm t tp when turned cunterclckwise. When the desired mde is highlighted, check the set temperature next t the Time f Day display. Different mdes will display different default temperatures based n typical recipe settings. If the temperature needs t be adjusted, use the TIME/TEMPERATURE dial t adjust up r dwn. When the mde and temperature have been crrectly selected, press the START buttn t begin. NOTE: If START is nt pressed within 10 secnds, the selected mde and temperature will be cancelled and the display will return t Time f Day r the active functins f the ppsite ven f a duble ven. WHILE THE OVEN IS RUNNING When a cking mde is started the PRE icn will appear in the clck display. This indicates the ven is Pre-Heating. BROIL mde des nt use a Pre-Heat cycle. The displayed temperature will increase until the set temperature is reached. When the set temperature is reached the ven will sund a beep tne and the PRE icn will turn ff. Once the set temperature has been reached it will be displayed cntinuusly. DOUBLE: T view the ppsite ven status f a duble ven when bth are being used, press the RIGHT r LEFT buttns t tggle the display. The cnvectin fan autmatically turns n in Pre-Heat and ff when the ven reaches temperature (unless a Cnvectin mde is selected). While the ven is in use an ON icn will turn n and ff r flash. Once heated yur ven will cycle the heating elements nly as required t maintain the set temperature f the ven. When the ON icn is n, the heating elements are turned n and when it is nt visible the heating elements are ff. When the ON icn is flashing the heaters are abut t turn n r ff. The ven uses a cling fan t keep the ven cl. The cling fan turns n autmatically when the ven inside temperature reaches 300 F and turns ff when the ven cls t 200 F. BROIL and SELF CLEAN mdes turn the cling fan n immediately upn starting the mde. Keep the dr clsed as ften as pssible t maintain a unifrm temperature in the ven. The ven was designed t perate in all mdes (including BROIL) with the dr cmpletely clsed. IMPORTANT: If the ven dr is left pen fr a perid f time while cking r the temperature setting is increased by 150 r mre, the ven will g int a rapid recvery mde. This is the same heating as PRE HEAT and uses intense heat frm the BROIL, BAKE, and CONVECTION Elements as well as the Cnvectin Fan t heat the ven quickly. This can cause fds t burn. 16

18 TURNING THE OVEN OFF T cancel a cking mde and turn the ven Off use the CANCEL buttn. DOUBLE: The LEFT CANCEL buttn will cancel nly the LEFT ven functins. The RIGHT CANCEL buttn will nly cancel the RIGHT ven functins. The CANCEL buttn will nt turn ff the ven lights. Use the LIGHT buttn. SECURING THE OVEN CONTROL The ven cntrl can be lcked int a Secure mde t prevent accidentally turning the ven by children r when cleaning. The Secure mde will disable all buttns and switches except the CANCEL buttns. T Secure the ven cntrl, press and hld the CANCEL buttn (either buttn n a duble ven) fr 5 secnds. The ven cntrl will beep and the display will shw OFF in the temperature readut areas f the display. T unlck the ven cntrl, press and hld the CANCEL buttn (either buttn n a duble ven) fr 5 secnds. The ven cntrl will beep and the display will n lnger shw OFF. The ven cntrl is unlcked and ready fr use. ADJUSTING THE OVEN MODE AND/OR TEMPERATURE If the temperature must be adjusted in the current mde press the TIME/TEMP dial/buttn nce. This will enter the TEMPERATURE adjustment mde. 48 r 60 Ranges: Fr a duble ven range, select the desired ven first by pressing either the RIGHT OVEN r LEFT OVEN buttns. Each ven temperature must be adjusted separately. Rtate the TIME/TEMPERATURE dial t select the desired temperature. Press START t set the new temperature. NOTE: If START is nt pressed within 10 secnds, the previusly set temperature will remain the current setting and the mde will cntinue unchanged. If the Cking Mde must be changed while the ven is ON the mde must be Cancelled and a new mde selected. 48 r 60 Ranges: The left side CANCEL buttn will cancel nly the LEFT ven functins. The right side CANCEL buttn will nly cancel the RIGHT ven functins. 17

19 SETTING TIMERS The Timers are timers nly and d nt affect ven functins. Yur ven has tw independent cuntdwn timers: TIMER 1 and TIMER 2. The Timers may each be set frm 5 secnds t 11 hurs 50 minutes. T set, press either TIMER 1 r TIMER 2 buttns (they each have the same functins). Rtate the TIMER/TEMP dial clckwise t increase the timer setting. Press the START buttn t begin the timer cuntdwn. NOTE: If START is nt pressed within 10 secnds, the timer will be cancelled. If a timer is running yu may change the timer value by pressing the TIMER 1 r 2 buttn (depending n which is t be changed), and rtating the TIME/TEMP dial t the desired time and pressing START. NOTE: If START is nt pressed within 10 secnds, the timer will revert t the previusly running timer. T cancel a timer, press the TIMER key twice and the setting will change t 0:00 and will revert t the standard display after 10 secnds. Alternately yu may press and hld the TIMER buttn fr 3 secnds and the timer will be cancelled. If the timer setting r remaining time is mre than 1 hur, a HR icn will be displayed and the time will be in hurs and minutes. If the setting r remaining time is less than 1 hur the HR icn will be ff and the time will be in minutes and secnds. TURNING LIGHTS ON AND OFF The ven lights may be turned n and ff as desired t better view cking fd. Press the LIGHT buttn t turn the lights n r ff. Bth the RIGHT and LEFT ven lights will turn n when the light switch is actuated n a duble ven. Oven lights DO NOT perate during Self Clean. 18

Clean excess spillage, grease and ther cking byprducts frm the ven prir t Self Cleaning. D nt line the ven with aluminum fil r ther materials. They may melt, burn r cause permanent damage t the ven. D nt tuch the uter surfaces f the ven during the Self-Clean cycle as the ven may be ht. The ven dr is autmatically lcked during the Self Clean cycle. D nt try and pen r frce the dr pen. Damage t the ven may ccur. Sme smke and drs are nrmally present during the Self Clean cycle as the fd residue burns ff. Sme nise may ccur during the cleaning cycle and when the ven is cling after the cycle ends. Metallic clicking and ppping sunds are nrmal and are caused by the heat expanding r cntracting the metal f the ven. Self Clean uses high temperature t burn ff mst fd residue in the ven. After self clean is cmplete the ven can be wiped dwn with mist spnge after cling t remve the ashen residue. The Self Clean functin runs fr 3 hurs and takes apprximately an additinal 1 t 2 hurs t cl dwn. The ven dr autmatically lcks when the Self Clean functin is started and will unlck autmatically when the ven cls t less than 500 F and the cling fan is On during the entire Self Clean cycle and will cntinue t run until the ven dr lck is cl. T use SELF CLEAN : Fllw all listed WARNINGS Fr a 48 r 60 range select the ven t clean r fr a 30 r 36 range, press the MODE dial and rtate t select SELF CLEAN. Press START. The dr latch will lck the dr and a LOCK icn will be displayed n the cntrl. The PRE icn and ON icn will be displayed n the cntrl t indicate the ven is heating. PRE will be displayed fr apprximately 45 minutes. This rapidly heats up the ven t SELF CLEAN temperatures. The ON icn will display when the heaters are n t maintain Self Clean temperatures. The cntrl will display a cuntdwn f 3 hurs in the clck sectin. When the Self Clean cycle is cmplete the Time f Day will be displayed and the LOCK icn will remain n until the ven is cl enugh fr the dr t unlck (apprximately 525 F). When the ven is cl the interir may be wiped dwn with a damp clth r spnge and mild detergent t remve ash residue. If slids remain stuck t the ven bttm glass, they may be remved by lightly scraping with a flat razr blade (Use Cautin when using a razr t prevent injury). 19

21 SPECIAL FUNCTIONS CONVECTION (Standard n All Dual Fuel Range Ovens) The CONVECTION buttn turns the ven Cnvectin Fan n during a cking mde prviding an additinal fur mdes f cking. CONVECTION used in cmbinatin with BAKE, DELICATE, BAKE, BROIL, r ROAST uses the same heat surces as the standard set mde but evenly mves the heated air thrughut the ven. When cking is cmplete and a mde is cancelled, the CONVECTION fan will autmatically turn ff. T use CONVECTION: NOTE: NOTE: IMPORTANT: After an ven is pre-heated, select the ven n a duble ven by pressing either RIGHT r LEFT. Press the CONVECTION buttn. The buttn will illuminate and the Cnvectin Fan will turn n. The Cnvectin Fan may be turned ff at any time by selecting the desired ven and re-pressing the CONVECTION buttn. The buttn light and fan will turn ff. The Cnvectin Fan will als turn ff when an ven cking mde is cancelled. The Cnvectin Fan autmatically turns ON during PRE HEAT and OFF at the end f PRE HEAT unless therwise selected. CONVECTION is nt selectable during SELF CLEAN. If the ven dr is left pen fr a perid f time while cking r the temperature setting is increased by 150 r mre, the ven will g int a rapid recvery mde. This is the same heating as PRE HEAT and uses intense heat frm the BROIL, BAKE, and CONVECTION Elements as well as the Cnvectin Fan t heat the ven quickly. This may cause fds t burn. ROTISSERIE (30 r 36 Oven r PRIMARY Oven nly n 48 r 60 ) WARNING: WARNING: IMPORTANT: IMPORTANT: IMPORTANT: WARNING: D nt place fd r the drip pan in the ven until the Pre-Heat cycle is cmplete! The Pre-Heat cycle generates intense heat frm the bttm, tp and rear f the ven and will burn fd and may cause damage t any items placed n the ven bttm r the ven itself. Never attempt t use the MEAT PROBE with the ROTISSERIE. Always turn the ROTISSERIE mtr OFF when checking the fd temperature with and instant read thermmeter. Always check fd clearances t the ven walls and drip pan prir t heating the ven Make adjustments t fd psitin r the drip pan prir t turning n the BROILER. T check clearances, place the fd n the Rtisserie rd with the frks secured and place in a cl ven. Turn the Rtisserie mtr On and make sure n cntact is made with any surfaces. Always place a drip pan belw the fd when Rtisserie cking in yur ven. This will catch all drippings during cking. BROIL is the cking mde fr use with ROTISSERIE. DO NOT use BAKE, DELICATE BAKE, r ROAST since these all use bttm heat and will directly heat the drip pan and nt the fd. Peridically check the fd n the Rtisserie t make sure it des nt cntact ven walls r the drip pan. Fd may becme lse during cking and may require re-psitining f the Rtisserie frks r securing the fd with cking string. ROTISSERIE cking uses the BROIL mde in cmbinatin with the ROTISSERIE mtr. The ROTISSERIE buttn turns the Rtisserie mtr ON and OFF when Rtisserie cking. The ROTISSERIE buttn illuminates when ON. The ROTISSERIE buttn can be turned On and Off at any time except when Self Clean is selected. IMPORTANT: This allws the ck t verify the fd is securely fastened t the Rtisserie Spit Rd with the Rtisserie Frks prir t placing in a ht ven. This als allws checking f clearances between the fd and the tp f the ven and the drip pan placed n the bttm f the ven prir t Pre-Heating. It is recmmended that the BROIL mde be CANCELLED anytime fd is being inserted r remved frm the ven when using the ROTISSERIE t prevent burns. The BROIL element heats rapidly and will have minimal effect upn cking if turned OFF when inserting r remving fd. 20

22 MOIST (30 r 36 Oven r PRIMARY Oven nly n 48 r 60 ) The MOIST feature adds a small amunt f water t the ven every minute when cking, resulting in mister cked fds. Water is stred in a Water Reservir behind the dr and flws int an Evapratin Tray belw the cnvectin baffle inside the ven. IMPORTANT: NOTE: WARNING: NOTE: IMPORTANT: IMPORTANT: ONLY USE DISTILLED WATER TO FILL THE RESERVOIR. Regular tap water will cause a buildup f minerals in the rifice f the mist system and may cause clgging. The Mist feature will nt functin unless a cking mde is active and Pre-Heat is cmplete. Mist mde shuld nly be used with temperature settings ver 250 F. Lwer temperatures will nt evaprate the water and water will accumulate in the evapratin tray. The Mist feature will NOT functin in SELF CLEAN r BROIL. Open the dr as few times as pssible during MOIST cking. Frequent pening f the dr will allw the misture and heat t escape the ven and will prevent the mde frm being effective. Prir t turning the ven n, make sure the Evapratin Tray is installed in the back f the ven. T use the MOIST feature, first add distilled water t the water reservir. The Mist Water Reservir is lcated at the right rear f the range tp. The cver f the Mist Reservir is attached t the reservir by a stainless steel chain and can be remved by lifting by the chain r by lifting frm the inner lip f the Reservir tube. The Reservir can be filled by remving the cver and puring distilled water int the pening r it can be lifted and remved, filled, and replaced. The reservir has a small white valve at the bttm which prevents spilling when the reservir is nt secured in its slt. After filling, replace the reservir in its slt and make sure it is firmly seated by pressing dwn slightly. If the reservir is nt prperly seated it will nt release water int the ven. Set the desired cking mde and temperature and allw the ven t Pre Heat. If selected prir t cmpletin f Preheat the MOIST feature will nt begin t functin until the PRE HEAT cycle is cmplete. Press the MOIST buttn t start mist cking. When activated, the MOIST buttn will be illuminated and water will be added t the evapratin tray every minute after Pre-Heat Only use the MOIST feature with ven settings abve 250 F. If the ven temperature is t lw the water will nt evaprate and may drip nt the ven bttm. The MOIST mde will autmatically turn Off when the cking mde is cancelled r can be manually turned Off at any time by pressing the MOIST buttn. When turned Off, the MOIST buttn light will turn Off. CLEANING THE EVAPORATION TRAY CAUTION! Only clean the Evapratin Tray when the ven is cl! The Evapratin Tray is inside the ven lcated directly belw the cnvectin baffle. Lift the Evapratin Tray up and remve frm the ven. Use a damp clth t and mild nn-abrasive detergent t wipe ut the interir f the cntainer prir t use. Fd particles and grease frm cking may fall int the cntainer and get trapped. IMPORTANT! Always remve the evapratin tray frm the ven prir t self cleaning. The tray is manufactured f high quality stainless steel and will disclr if left in the ven during self clean. 21

23 SPECIAL FUNCTIONS PROBE PROBE allws the ven t mnitr the fd temperature as it cks and stps cking when the fd is dne. The Meat Prbe is inserted int the fd t mnitr the internal temperature. When the fd is dne, the cking mde will change t HOLD mde fr tw hurs. The PROBE functin is used in cnjunctin with a cking mde set t the recipe cking temperature. WARNING: The PROBE functin cannt be used with BROIL r SELF CLEAN mdes t prevent damage t the Meat Prbe. WARNING: The PROBE shuld nt be used when cking at temperatures higher than 450 F. T use the PROBE functin the fllwing steps are t be fllwed: Set rack psitins when the ven is cl. Set the desired cking mde and cking temperature. Allw the ven t cmplete the Pre-Heat cycle. Press the PROBE buttn. Set the desired internal temperature f the fd t be cked. Insert the sharp end f the Meat Prbe int the thickest sectin f the fd (i.e. the center f a rast r the thigh f a turkey). Plug the ppsite end f the prbe int the Meat Prbe Scket. The ven will shw the internal temperature f the fd in the temperature display. NOTE: When the Meat Prbe is placed int cld fd the temperature will nt indicate lwer than 95 F. When the desired temperature is achieved, the ven will g int HOLD mde, which will lwer the ven temperature setting t 150 F and will remain n fr 2 hurs. WARNING: IMPORTANT: T maintain fd safe cnditins, fd shuld be remved frm the ven prir t the end f the HOLD cycle. T prevent pssible damage, d nt fully immerse the prbe in water when cleaning. When washing the Meat Prbe, use water with a mild detergent and wipe clean the metal skewer sectin, bdy and crd. 22

24 SPECIAL FUNCTIONS DELAY COOK Yur ven can be set t start cking at a desired time by presetting a cking mde, temperature, and setting a start time in DELAY COOK. WARNING: WARNING: IMPORTANT: When using DELAY COOK, always maintain fd safe habits and be extremely careful f access t the ven by children r adults wh may be injured r cause damage by a live ven. D nt use DELAY COOK fr fds subject t spiling (dairy prducts, eggs, uncked pultry, etc. When using DELAY COOK the Pre-Heat cycle is eliminated t prevent fd frm burning. The ven will take an additinal minutes t heat t the set temperature. Please take nte f the additinal time that may be required t heat the ven when using DELAY COOK. T use DELAY COOK, first set the ven racks t the desired psitin while the ven is cl. Fr a Duble Oven, select the desired cking ven. Select and set the cking mde and cking temperature. Press the DELAY COOK buttn. Use the TIME/TEMP dial t adjust the desired start time. DELAY COOK may be used with the MEAT PROBE and TIMED COOK functins if desired. These mdes are set nrmally as described in this manual. DELAY COOK may be used with the Self Clean functin. T view the setting, press TIMED COOK (fr 48 r 60 Ranges press the active ven, either RIGHT r LEFT then TIMED COOK) WARNING: When using DELAY COOK, with the Self Clean functin, make sure t remve all racks, cking vessels, utensils, wipe up excess spills and remve large fd particles prir t setting the ven. DELAY COOK cannt be set with the Self Clean functin if the ven r ne, r bth f the vens f a duble ven, is in use, still ht, r lcked. TIMED COOK Yur ven can be set t end cking after a set time has passed by using the TIMED COOK functin. T set TIMED COOK a cking mde must be active (r set with DELAY COOK). Press the TIMED COOK buttn t enter the duratin time screen. Use the TIME/TEMP dial t set the duratin in minutes, r hurs and minutes. Press START t activate the TIMED COOK functin. T view the setting, press TIMED COOK (fr a 48 r 60 Range press the active ven, either RIGHT r LEFT then TIMED COOK) 23

25 At the end f a TIMED COOK mde, the ven will change frm the cking mde t HOLD mde. HOLD mde will lwer the ven temperature setting t 150 F and will remain n fr 2 hurs. SABBATH MODE Sabbath mde will turn ff beepers, disable ven lights, will maintain cnstant readuts f SAb in the temperature readut zne, and will allw ven temperature t be changed withut changing displays, disables ven lights. SABBATH can be selected fr the fllwing cking mdes; BAKE, DELICATE BAKE, ROAST, and PERFECT CONVECTION. T enter int SABBATH mde, select an ven (fr a duble ven) and start the desired mde and temperature. After PRE HEAT is cmplete, press and hld the START buttn fr 4-5 secnds. The ven will beep while the START buttn is being held. The ven cntrl will tne and SAb will be displayed in the temperature area f the cntrl fr the selected ven. Oven temperature can be changed in SABBATH mde but with n display change. T change ven set temperature, select the desired ven by pressing the RIGHT r LEFT BUTTON. Press and rtate the temperature dial, clckwise t increase and cunterclckwise t decrease temperature. The temperature can nly be adjusted within the nrmal limits f the ven (135 F t 550 F) Temperature changes will be implemented by the cntrl within a randm time f secnds. When in Sabbath mde the ven will remain ON in the set mde until turned OFF. The CANCEL r turn Off SABBATH mde, press the CANCEL buttn fr the desired ven. NOTE: SABBATH must be reset fr each use after cancelling. 24

26 TIPS General Briling Always center yur ckware within the ven frm frnt t back and side t side t ensure even heating. Darker cntainers will absrb mre heat and will prvide a darker r crisper crust while lighter pans and vessels will reflect mre heat and prvide a mre unifrm heat. Use lw sided r flat cking vessels, such as ckie sheets, when cking with cnvectin and even heat is desired arund the fd. This will allw the heated air mving within the ven t envelpe the fd and prvide even heating. High sided vessels will restrict the heated air flw and may affect even cking. When cking large rasts r pultry, it is recmmended t use a V-rack within a rasting pan. This allws even heating f the fd and catches the drippings fr flavr. Fllw the recmmendatins f recipes r ckbks fr specific types f recmmended ckware. Open the ven dr nly when required! Opening the dr allws heat t escape and requires the ven t recver which can affect cking. Check fd by using the ven light and viewing thrugh the dr glass whenever pssible. Never use a cking vessel that cmpletely cver the ven frm side t side and frnt t back. There must be rm fr heat t circulate within the ven t allw even cking. Fd cntinues t ck even after remving frm the ven. T prevent vercking, remve the fd when the internal temperature is slightly belw the desired temperature. Allw the fd t rest and mnitr temperature fr dneness. If a recipe, such as frzen pizza, requires fd be placed in a cld ven, use DELAY COOK, set fr a shrt delay, t eliminate PRE HEAT. Always bril with the ven dr cmpletely clsed. Check yur rack psitin with the fd n the bril pan when the ven is cld. If the fd is t clse t the briler it may burn. The briler rapidly prduces intense heat! Rtisserie Cking Always check clearances prir t heating the ven! Always spend the extra time required t balance the fd n the rtisserie spit. Try and rll the spit in yur hands prir t placing in the ven. If it is unbalanced, repsitin the frks until it rlls well. An unbalanced lad can ck unevenly, and cause the fd t cme lse during cking, etc. Rtisserie cking is a slw cking prcess. Lwer the temperature f the BROILER setting and peridically check dneness with a meat thermmeter when the rtisserie is stpped. Fds selected fr ROTISSERIE cking in the ven shuld be sized s they are nt t clse t the BROIL glass when secured. If it is t clse the utside will ver ck prir t the inside being cked. Multi Rack Cking If cking n multiple racks the PERFECT CONVECTION mde is recmmended. All ther mdes will prvide less even heat n the varius levels f cking. When multi-rack cking, leave as much rm arund each cking vessel as pssible t allw the heated air t flw as evenly as pssible thrughut the ven and arund the fd. 25

27 CARE AND MAINTENANCE WARNING: WARNING: D nt tuch the interir surfaces f the ven during use. After use, make sure these surfaces have had sufficient time t cl befre tuching them. D nt clean the ven dr gaskets. The dr gaskets are essential fr a gd seal f the ven. Care is t be taken during cleaning t prevent rubbing, damaging, r mving the gasket frm its installed psitin. MEAT PROBE: Clean the meat prbe by lightly scrubbing the skewer, crd, and plug husing with mild detergent and water after each use. D nt fully immerse the meat prbe. Lightly wipe the plug end with a mist clth and dry after cleaning. The Meat Prbe is NOT t be used when BROILING. BROIL temperatures exceed the maximum temperatures f the prbe. Use an instant read thermmeter t check fd temperatures when BROILING. MEAT PROBE SOCKET: Wipe the area arund the meat prbe scket accrding t the table belw. Prevent water frm directly entering the scket. Remve fd r cleaning prducts that may enter the pening f the scket with a tthpick r ther nn-metallic implement. ROTISSERIE MOTOR SOCKET: Wipe the area arund the rtisserie mtr scket accrding t the table belw. Remve any fd that may be stuck t the scket. ROTISSERIE SPIT ROD AND FORKS: WARNING: Use cautin when cleaning the spit rd and frks. They are sharp and can cause injury! Wash the rtisserie spit rd and frks with mild detergent and/r mild abrasive. T prevent sticking, remve and cleaning the threaded fasteners n the frks and clean separately, then replace after cleaning. BROIL PAN: Rtisserie frks are dishwasher safe. Wash the bril pan and cver with mild detergent and/r mild abrasive after each use. 26

28 USING THE RANGETOP BURNERS CAPITAL RANGE TOP BURNERS Yur new gas range is equipped with the latest in burner technlgy and is cnfigured with either the Capital Open Burner system r the Capital Sealed Burner system. CAPITAL OPEN BURNERS All Open Burner ranges are equipped with ne small pan burner at the back left psitin n the range tp and all thers rated at BTU (20,000 BTU fr LP) When using the simmer feature, turn the main burner knb dwn t the simmer psitin. CAPITAL SEALED BURNERS Sealed Burner ranges are equipped with the high BTU burner at all psitins. When using the simmer feature, turn the main burner knb dwn t the simmer psitin. ELECTRONIC IGNITERS All the range-tp burners have electrnic spark ignitin. If a burner des nt immediately ignite TURN OFF THE BURNER. Check the circuit breaker fr a blwn fuse r tripped circuit breaker. Wait 5 min utes befre attempting t reignite. If the igniter still fails see the TROUBLE SHOOTING sectin f this manual. PROPER FLAME HEIGHT The crrect height f the flame mainly depends n the size f the bttm f the cking utensil. Fllwing are sme basic rules fr selecting flame height. Fr safety reasns, the flame must never extend beynd the bttm f the cking utensil. Never allw flames t curl up the sides f the pan. Utensils which cnduct heat slwly (such as glass-ceramic) shuld be used with medium t lw flames. If yu are cking with a large pt, a larger flame can be used. NOTE: If yu are using prpane gas, a slight pp flash may ccur at the burner prts shrtly after the burner has been turned ff. This extinctin pp is nrmal fr prpane gas BURNER EFFICIENCY AND FLAME CHARACTERISTICS It is necessary t keep the burner prts and the igniters clean fr gd ignitin and efficient perfrmance f the range tp burners. The burner flame is the cne f flame tuching the burner. The flames shuld burn all arund the burner withut excessive nise r lifting. The flame shuld be blue in clr and stable withut yellw tips. Fr Open Burners, sme range present in the large crna abve the main flames is nrmal. An imprper air / gas mixture may cause the burner t flutter r yellw tipped flames. A qualified technician shuld adjust the burner. During initial use, freign particles in the gas line r dust in the air may cause an range flame. This will disappear with use. USING THE RANGETOP BURNERS THE CONTROL KNOBS The cntrl knbs are readily assciated with the burners they cntrl. The RANGETOP cntrl knbs are labeled in frnt f the burners. The ven cntrl is placed slightly higher than the ther cntrl knbs. This is due t the physical size f the cmmercial type thermstats used n the prduct. BURNER GRATES The burner grates are a heavy cast irn. They are designed in sectins t make them easier t remve and clean. CAUTION! When turning n any RANGETOP burner, be sure t stp at the "LITE" psitin befre turning the burner t a flame setting fr cking. If the burner is nt lit and it is turned beynd the "LITE" psitin, t HI, MEDIUM, r LO, there will be a burst f flame when the burner des light. This culd cause burns r damage t the surrunding cunter tp. 27

29 Nte: If the Igniter cntinues t click after the burner has been lit, turn the knb t a setting ther than LITE, r HI. If the prblem still persists, please call ur Service Htline at BURNER SETTINGS The rangetp burner valves have infinite settings with n fixed psitins n the cntrl knbs between HI and SIMMER. T turn the rangetp burner n, push in the cntrl knb and turn it cunterclckwise t the "LITE" psitin. An audible clicking sund will be heard. When the gas has been ignited by the electrnic spark igniter, turn the knb t the desired setting. Nte. If yu are using prpane gas, a slight pp r flash may ccur at the burner prts a few secnds after the burner has been turned "ff". This "extinctin pp" is nrmal fr prpane gas. USING THE WOK RING ACCESSORY The Wk Ring accessry fr wk cking is available fr bth sealed burner and pen burner mdels. Open Burner tps replace a tp grate with the CWR wk grate. The side penings f the wk grate must be n the sides directed away frm the ck. The Open Burner Wk system is perfectly designed t deliver high intense heat, by spreading the flame under the diameter f the wk pan. The Sealed Burner Wk Ring accessry (PSWK-RNG) can be placed n any tp burner t securely hld a wk fr cking. All the range-tp burners have electrnic spark ignitin t eliminate cntinuusly burning pilts. When the main burner flame is blwn ut, it will relight. Als each burner has its wn ignitin mdule. If ne mdule fails all thers will cntinue t wrk and yu are nt incnvenienced. If a burner des nt ignite, listen fr the clicking sund. If the burner des nt click, TURN OFF BURNER. Check the circuit breaker fr a blwn fuse r a tripped circuit breaker. When the grill has cled, clean the drip tray and cmpartment. GRILL RACKS Open Burner mdel grill racks are made f enamel cated cast irn and shuld be washed with mild sapy water r a mild abrasive cleanser after each use. Shuld flare-ups becme excessive, remve the fd frm the grill and turn ff the burner Excessive flames ccur when cking meat with high fat cncentratin, i.e. 30% grund beef, untrimmed steaks, lamb chps, etc. Be cautius when turning meat ver, and never PLOP the meat n the grates. 30

32 USING THE THERMO GRIDDLE DESCRIPTION: PRIOR TO USE: CONTROL KNOB The built in griddle is made f nn rusting 3/8" thick stainless steel. This prduces a surface that is easy t clean and never rusts. The griddle has a aluminized steel straight tube burner that is lit by a ht surface igniter. The griddle shuld pre heat fr five t ten minutes. A chpping blck is available as an accessry and purchased separately. It is sized t fit n tp f the griddle surface when Range tp is nt in use. The burner is rated at 18,000 BTU/HR. The griddle must be level r tilted slightly frward fr ptimum perfrmance. The griddle shuld have been leveled during installatin. PRIOR TO USE, It Is NECESSARY t wash the griddle plate with warm sapy water then rinsed with clear water. The griddle may be used withut butter, margarine, r il. Hwever, a very small amunt may be used t flavr fds. The griddle is thermstatically cntrlled with temperatures marked n the knb frm 150 degrees F t 500 degrees F There are n fixed settings n the knb. Press and turn the knb cunter-clckwise t the temperature setting. COOKING ON THE GRIDDLE Check that the grease tray is tucked under the griddle plate verhang. Turn the knb t the cking temperature t preheat the griddle. Preheat Minutes depending n the temperature setting Add butter, margarine, shrtening r il fr mre flavr: Add fd and ck! 31

33 CLEANING AND MAINTENANCE AT THE END OF THE CLEAN CYCLE CAUTON: The interir f the ven will still be at baking temperature when the lck light turns ff and the ven dr can be pened. Use cautin as the ven may be ht enugh t cause burns. The Clean cycle takes hurs t cmplete. The LOCK light turns ff nce the cycle has finished and the ven has cled t 525 F. The dr latch will pen autmatically after the autmatic Dr Lck cmpletes its 30 sec, cycle t the OPEN psitin. Wipe ff white ash residue with a damp clth r spnge befre placing ven racks. Replace the ven racks. CLEANING STAINLESS STEEL COMPONENTS All stainless steel parts f the appliance can be cleaned with ht sapy water, rinsed, dried and buffed t a shine with a sft, heavy pile clth. Make sure yu clean in the DIRECTION OF THE GRAIN and never in circular mtins as this may scratch the stainless steel. GENERAL CLEANING When cleaning this range r range-tp: Always use the mildest cleaning prcedure first. Sme brands f cleaners f the same type are harsher than thers, read their directins. A scent r a prpellant can make a difference in the prduct. Read the ingredients. Try n a small area first. T avid marring the surface always rub metal finishes in the directin f the plish (grain) lines. The cleaner will be mre effective when used in the directin f the plish lines. Use nly clean spnges, sft clths, pa per twels, fr cleaning r scuring (Use nly sap pads with sap still in them. An empty pad can scratch), as recmmended in this sectin. RANGETOP CLEANING Turn f all the burners and allw the grates t cl befre starting t clean the range tp. D nt clean ht surfaces which can cause burns. Clean nly when the range r Range tp has cled t rm temperature. BURNER GRATE CLEANING When lifting the grates, be careful as they are heavy. Place them n a prtected surface, s they wn't scratch the surface they are laid n. The burner grates are matte prcelain enamel ver cast irn. When cl they may be placed in the dishwasher, r wipe while n the range tp using ht sapy water, then rinsed and wiped dry. The burner grates will nt rust as they are matte prcelain enamel n bth sides fr durability. The ccasinal use f mild abrasive cleaners such as Bn-Ami, Sft Scrub. Abrasive cleansers, used vigrusly r t ften, can eventually harm the enamel. Apply with a damp spnge, rinse thrughly and dry. The prcelain may pp f the edge f the grates due t rapid temperature change when the burners are turned n, D nt be cncerned as this des nt result in the deteriratin f the grates. The cast irn sn darkens t blend with the prcelain enamel. Be careful when wiping an area where the prcelain has ppped ff, as the edges may be sharp. BURNER MAINTENANCE Fr prper lighting and perfrmance keep the burners clean. It is necessary t clean the burners if they d nt light even thrugh the igniter clicks, if there has been a severe bil ver, r when the flame des nt burn blue, and when the grates and burners are cl, remve the grate. The Burner Cap can easily be remves. Wash these parts in ht sapy water, rinse and dry thrughly. The Burner Caps are prcelain enamel cated.fllw the directins abve fr Cleaning Burner Grates. A bristle brush can be used t clean ut the burner prts, if necessary. NOTE: After cleaning, it is imprtant t make sure the Lcating Ntch r Pin at the bttm f the Burner Cap is prperly aligned with the Burner Base. Incrrect alignment will prduce a ptentially dangerus flame and pr burner perfrmance 32

34 CLEANING AND MAINTENANCE (cnt d) CLEANING IGNITERS Wipe with a water-dampened cttn swab. Be careful nt t damage the igniter. (See illustratin). CLEANING CONTROL KNOBS - RANGETOP AND OVEN These are made f die-cast metal with plastic inserts fr easier gripping. They can be cleaned in ht, sapy water. T remve the Knbs frm the cntrl panel, grasp the knb and pull straight frward. Wash, d nt sak. Rinse and dry thrughly. It is imprtant t replace these knbs n the crrect gas valve n the cntrl panel. CLEANING LOW BACK, OR HIGH SHELF (IF INSTALLED) Depending n the mdel, these are cnstructed f all stainless steel. Use the mildest cleaning prcedure firs t ht sapy water, rinse and dry. If the panel has fd sil remaining, try a general kitchen cleaner, such as Fantastic, Simple Green, r Frmula 409. Fr hard t clean sil use a stainless steel cleaner such as, Bn-Ami,, Carne,, r Bar Keepers Friend. Apply cleaner with a damp spnge, rinse thrughly and dry. Always scrub lightly in the directin f the grain. D nt use a steel wl pad, it will scratch the surface. T tuch up nticeable scratches in the stainless steel, sand very lightly with dry 100 grit emery paper, rubbing in the directin f the grain. After cleaning use a stainless steel plish, such as Stainless Steel Magic. NOTE: If the rear tp burners are used extensively n high it is pssible fr the vertical stainless steel panel t disclr frm the burner heat. This disclratin can be remved by using Revere Ware Stainless Steel Cleaner. CLEANING OVEN AND DOOR INTERIOR If in the event the ven dr cmes ff track, r becmes misaligned, realignment can be achieved by fllwing this simple prcedure: Open the dr and hld it all the way pen. Clse the hinge latches. Once bth hinges are lcked, gently lift the dr up and partially ut until the dr is evenly aligned. Evenly slide the dr back int place and check t assure the hinges rest in the center f each dr hinge rller. With the ven dr fully pen, unlck hinge latches and the dr is ready t clse again. Call ur service technician if yu encunter difficulty. Be sure the ven and dr are cl befre yu start t clean them. They are prcelain enamel cated. It is acid resistant, but nt acid prf. TESTING AND ADJUSTMENTS Install any lse cmpnents, such as burner caps and grates, ven racks that may have been remved earlier t facilitate mving the appliance. Be certain that burner caps seats prperly int the alignment slts in the burner bases. Befre testing peratin f the appliance, verify that the unit and the gas supply have been carefully checked fr leaks and that the unit has been cnnected t the electrical pwer supply. Turn the manual gas shut-ff valve t the pen psitin. Check the peratin f the sealed gas burners by pushing and turning each knb cunterclckwise t "Hl". The burner igniters will click until the flame ignites. Burner flames shuld be BLUE and stable with n yellw tips, excessive nise, r lifting f the flame frm the burner. If any f these cnditins exist, check that the air shutter (grill and griddle nly) r burner prts are nt blcked r clgged. Remve any blckages that exist. If the flame is t yellw, indicating insufficient air, adjust the shutter cunterclckwise t increase air inlet (grill and griddle nly). 48

50 INSTALLATION (cnt d): CAUTION! The appliance must be islated frm the gas supply piping system by clsing its individual manual shut-ff valve during any pressure testing f the gas supply piping system at test pressures equal t r less than 112 psig (3.5kPa.). The Appliance and its individual shut ff valve must be discnnected frm the gas supply piping system during any pressure testing f the system at test pressures in excess f 1/2 psig (3.5kPa.). When checking the manifld gas pressure, the inlet pressure t the regulatr shuld be at least 6.0". DO NOT attempt any adjustment f the pressure regulatr. Use 5/8" diameter flex line t cnnect between the gas supply and the appliance manifld pipe, which exists at the upper left rear f the appliance. The appliance manifld pipe cnnectin is 1/2". Use cautin t avid crimping the 5/8" flex line. NOTE: the flex line fr the gas supply must be metal and apprved by an apprved certifying agency (AGA, CGA, CSA, UL r CUL). NEVER use a hse made f rubber r ther synthetic material as the heat may cause the hse t melt and develp leaks, thus causing fires, physical and prperty damage. Always use pipe dpe r Tefln tape n the pipe threads, and be careful nt t apply excessive pressure when tightening the fittings. Leak testing f the appliance shall be in accrdance with the manufacturer's instructins. Turn n gas and check supply line cnnectins fr leaks using a sap slutin. Never use a flame f any srt t test fr leaks. A manual shut ff valve must be installed external t the range in an accessible lcatin frm the frnt fr shutting ff the gas supply when required. The supply line MUST NOT prtrude beynd the back f the range. Ensure that the gas supply is turned OFF at the external shut-ff valve befre cnnecting the range. The gas supply cnnectin must be made by an experienced technician and in accrdance with lcal cdes r rdinances. In the absence f lcal cdes r rdinances, please refer t Natinal Fuel Gas Cde ANSI Z223.1 / NFPA54-Current Issue. The range is supplied with its wn pressure regulatr CAUTION! When cnnecting unit t Prpane (LP) gas. Make certain the prpane tank is equipped with i ts wn high-pressure regulatr in additin t the pressure regulatr supplied with the appliance the pressure & the gas supplied t the appliance regulatr must nt, exceed 14" ( 37 mb) water clumn. Oven dr hinges seated and hinge lcks in prper psitin. Dr pens and clses prperly. Turn dedicated breaker r fuse n. Check functin f ven. Set clck and familiarize users with nrmal ven peratin. If any prblems ccur during installatin, reference TROUBLESHOOTING sectin f Use and Care Manual prir t calling Capital Cking service. Fill ut and return all warranty infrmatin. 52 OPEN BURNER FLAME ADJUSTMENT PROCEDURE Nte: This prcedure is nt required fr units with sealed range tp burners PREPARATION Fr safety purpses, turn ff pwer and gas t the range while remving and installing the burner parts. Turn ff all ventilatin hds, heating & air cnditining, and clse windws near the appliance t prevent breezes frm interfering during adjustment. Carefully clean the metal tip f the igniter electrde with alchl and a lightly abrasive cleaning pad r tthbrush. Dry thrughly. AIR SHUTTER ADJUSTMENT Crrect air shutter adjustment is required prir t further adjustments. Yu will need a screwdriver (Flat r Phillips head) t make this adjustment. Turn pwer ON t the appliance. Turn the burner n HIGH. All flames shuld have a sharp blue cne which just tuches the burner. If flames are lifting abve the burner base, if the flames d nt immediately ignite all arund the burner, r if flames are yellw r are nt a sharp cne shape fllw the prcedure belw. Lifting Flames: Turn the burners ff and remve all burner grates and spill pans. Using a screwdriver, lsen the screw securing the air shutter. Clse the pening f the air shutter slightly. Turn the burner On and check the flame fr lifting. Adjust the air shutter until the flame is a slid blue cne tuching the burner. Sme range in the large flame crna abve the burner is nrmal. If flames d nt immediately ignite all arund the burner, readjust the air shutter and retest. Tighten the screw n the air shutter then reassemble the spill pans and grates. Yellw tipping r weak flames If the flames have bright yellw tips (like a candle) r the flames are weak and flutter easily at the base, mre air is required. Using a screwdriver, lsen the screw securing the air shutter. Open the pening f the air shutter slightly. Turn the burner On and check the flame. Adjust the air shutter until the flame is a slid blue cne tuching the burner. Sme range in the large flame crna abve the burner is nrmal. If flames d nt immediately ignite all arund the burner, re-adjust the air shutter and retest. Tighten the screw n the air shutter then reassemble the spill pans and grates. 53 OPEN BURNER FLAME ADJUSTMENT PROCEDURE ADJUST SIMMER FLAME Simmer Adjustment T adjust the simmer flame yu will need a flat head screwdriver with a 3/32 maximum diameter shaft and a length f at least 2-1/4 and pliers. IMPORTANT: Turn ff air cnditining, fans, and ventilatin hds and clse windws t prevent breezes arund the burners when making these adjustments. They can affect burner functin. Set the burner t be adjusted t Simmer. Remve the knb by carefully pulling the knb straight ut. Place the flathead screwdriver int the hle in the center f the shaft behind the knb. Very lightly turn the screwdriver until yu feel it seat int the screw head at the back f the shaft. T reduce the Simmer flame hld the shaft with pliers t prevent it frm turning then slwly turn the screwdriver Clckwise. The flame will begin t reduce in size. Turn the screwdriver until the burner starts t click r flames begin t extinguish n several hles f the burner. After the burner begins clicking r several flames extinguish n the burner, turn the screwdriver slwly cunter clckwise until the burner stps clicking and flames are present in all hles f the burner. Place a pt r pan with a small amunt f water n the grate and check fr clicking. Re-adjust as necessary. Simmer Adjustment 52
