Turns the Mist functin On and Off during cking mdes. If activated during the ven pre-heat cycle, the mde will nt becme active until pre-heating is cmplete. 8 OVEN FEATURES DEFINED 1. Mde Icns: These icns illuminate t shw which ven mde is being used. All icns will light up when Mde selectin is started and a single mde will be highlighted when the Mde Selectr Dial is rtated and Mde is selected. 2. Mde Dial / Buttn The Mde Dial / Buttn will start Mde selectin when pressed nce and is rtated t tggle between mdes. 3. Clck and Temperature / Functin Display Displays the Time f Day when the ven r Timers are nt in use. A single ven will display the set temperature n the right side f the Time. A duble ven will display Upper Oven Temperature n the Left and Lwer Oven Temperature n the right f the Time. Other ven status icns will be displayed in this area during ven use. 4. Time / Temperature Adjustment Dial / Buttn The Time / Temperature Adjustment Dial / Buttn will allw adjustment f the set temperature, time f day, r timer settings when rtated. The temperature adjustment mde can be entered by pressing the dial while the ven is in peratin (except fr Self-Clean) then rtating t change the temperature. 5. Dr Latch The Dr Latch lcks the dr during the Self Clean cycle fr safety. 6. Cntrl Panel Buttns The Cntrl Panel is a smth glass panel with buttn areas indicated by vals. The buttn functins are activated by a light tuch. The CONVECTION, ROTISSERIE, and MOIST buttns will illuminate when these functins are active. 7. Cabinet Munting Hles Munting hles are lcated n the frnt and inside surfaces f the stainless trim and are used t secure the ven t the cabinet. 8. Bril Element A high intensity dual ribbn briler is lcated under glass at the tp f the ven. 9. Meat Prbe Scket Lcated abve the tp rack in the upper left frnt f the ven, this scket is where the meat prbe is plugged in t allw the ven t sense the temperature f large meat r pultry dishes and the put the ven int Hld when the fd is cked. 10. Meat Prbe The Meat Prbe plugs int the Meat Prbe Scket in the wall f the ven and int the fd being cked. The Meat Prbe can then be set t the desired fd temperature fr cking. 11. Dr Gasket (Upper) The Dr Gasket is used t retain heat within the ven 12. Rtisserie Frk Tw Rtisserie Frks are prvided with the ven and are used t secure fd t the Rtisserie Spit Rd during cking. 13. Rtisserie Spit Rd The Rtisserie Spit Rd is used in cmbinatin with the Rtisserie Frks t hld fd when cking in Rtisserie mde. 7

Oven Rller Rack Three ven racks are prvided per ven. Each rack is hinged fr easy insertin and remval frm the ven and allws the full width f the ven t be used when cking. Rllers n each rack prvide smth mvement when cking r checking fd. 16. Hinge Receptacle The hinge receptacles hld the ven drs in place and allw easy remval f the drs when installing the ven. 17. Oven Heat Vent Cl air circulates thrugh the ven dr t keep it cl during cking and ht air is exhausted thrugh the Oven Heat Vent at the bttm f the ven. D nt blck r bend this area when the ven is in use r during installatin. 18. Dr Gasket (Lwer) The Dr Gasket is used t retain heat within the ven 19. Bake Elements (Under Glass) Dual Bake Elements are lcated under black Ceran glass fr even heating and easy cleaning. 20. Cnvectin Baffle The cnvectin baffle is munted t the rear f the ven and cvers a remte third heating element while evenly distributing heated are thrughut the ven. 21. Rtisserie Mtr The rtisserie mtr interface is lcated in the right rear f the ven. The square pinted end f the Rtisserie Spit Rd is placed int the receptacle and the ppsite end is secured in the frnt bracket t allw rtisserie cking. 22. Temperature Sensr The temperature sensr reads the ven temperature and sends it t the cntrl 23. Serial Number Label The serial number is required fr any service r warranty calls. 24. Water Reservir Access Prvides access t the water reservir fr Mist mde t fill and empty. 8

10 USE OF YOUR OVEN INITIAL OVEN SETUP CLOCK When pwered up and prir t pressing any buttns the clck will flash 12:00 and will increase each minute. T set the ven clck press the CLOCK buttn n the cntrl panel nce. The clck will blink indicating it is ready t be set and the AM r PM icn will be displayed. Set the crrect time by rtating the TEMP/TIME knb n the right side f the cntrl panel clckwise t increase the time and cunter clckwise t decrease the time. Once the present time has been selected, press the START buttn t set the time. A 12 hur clck display is the default but may be changed. If a 24 hur military type clck display is desired, press and hld the CLOCK buttn fr 6 secnds. 12 hr r 24 hr will be displayed and can be tggled by pressing the TIME/TEMP knb. Press START t select the desired display type. Nte: AM r PM will nly be displayed during the setting f the clck. FAHRENHEIT OR CELSIUS TEMPERATURE DISPLAY Temperature is displayed in Fahrenheit as a default but may be changed t Celsius if desired. T change the temperature readut t degrees Celsius select the BROIL mde and set it t HIGH. Start the mde and press and hld the TIME/TEMP buttn fr 6 secnds. F (Fahrenheit) will be displayed as the current mde as a factry default. It can be tggled t C (Celsius) by pressing the TEMP/TIME knb. Press START t select the desired mde. CONTROL BEEPER An audi beeper is used t indicate presses f the cntrl, indicate alarm expiratin, end f cycles, etc. The beeper may be disabled if desired. T disable the beeper, press and hld the DELAY COOK buttn fr 6 secnds. On r Off will be displayed (On is the default). The state f the beeper can be tggled by pressing the TEMP/TIME knb. Press START t select. OVEN LIGHTS Oven lights may be turned On and Off by pressing the LIGHT buttn n the cntrl panel. In a duble ven bth the upper and lwer ven lights will be turned On and Off when the LIGHT buttn is pressed. 9

11 OVEN HEATING MODES DEFINED Yur Oven features cking mdes which are used in mst frms f in-huse cking. PRE-HEAT Mst recipes call fr an ven t be heated t a particular temperature prir t the start f cking. This heating f the ven is the Pre-Heat mde and uses high intensity heat frm the tp, bttm, and rear f the ven t quickly and evenly heat the ven. The Cnvectin Fan is als used during Pre-Heat t rapidly distribute the heat thrughut the ven. The same heating is used fr Rapid Recvery when the ven temperature is reduced by ver 100 F frm the ven setting. NOTE: Due the high intensity heat generated during Pre-Heat, fd shuld NOT be placed in the ven until the ven indicated Pre-Heat is cmplete. This will be indicated by the PRE icn turning ff and a beep tne by the ven t indicate the set temperature has been achieved. BAKE The mst traditinal type f ven heating, Bake generates mst heat acrss the entire bttm f the ven. DELICATE BAKE Delicate Bake is very similar t Bake and als heats frm the ven bttm but Delicate Bake generates mst heat arund the uter edge f the ven bttm. Perimeter heating helps prevent scrching f delicate items that can ccur when using the mre intense standard Bake. BROIL Bril uses the tp element which rapidly generates searing heat desired fr cking steaks, chps, sme fish, and fr tasting breads. Carefully select the distance frm the Briler glass t prevent vercking r burning fds. PERFECT CONVECTION Perfect Cnvectin uses n direct heat but heats the air being mved arund the ven with a cncealed Cnvectin Element behind the Cnvectin Baffle. This is a gd general cking mde and als used fr multi rack cking since it cks fd indirectly by heating and mving the air in the ven preventing ht spts. CONVECTION COOKING All cking mdes can als be Cnvectin Cking mdes by activating the CONVECTION buttn which turns n the Cnvectin Fan. This will circulate the heated air thrughut the ven and mre evenly distribute heat. Sme traditinal dishes that desire a bttm crust shuld nt use the Cnvectin ptin t allw the bttm heat t create the crust. NOTE: Cnvectin cking reduces ck times by 10% and reduces the cking temperature by apprximately 25 degrees. ROAST Rast uses bth tp and bttm heat t imprve searing f large meat and pultry items. Mre heat is generated at the bttm f the ven when rasting due t the cmmn use f heavy rasting pans. 10

12 OVEN HEATING MODES DEFINED (cntinued) SELF CLEAN Self Clean is a special heating functin that raises the ven temperature t levels that will burn mst fd byprducts t ash. It is a 3 hur heating cycle but due t the extreme heat generated, the ven dr is autmatically lcked when the cycle is started. Daily ven cleaning can be accmplished with mild detergent and water with a nn-abrasive spnge but a Self Clean cycle perfrmed nce r twice a year r after particularly high splatter cking will eliminate unseen build up within the ven and reduce the generatin f smke during cking. HOLD The HOLD functin is autmatic and is entered when a Timed Ck r Meat Prbe functin has been cmpleted. HOLD will reduce the ven temperature setting t 150 F using the perimeter Bake heating element t sustain the temperature while reducing the cncentratin f heat. The HOLD mde is timed fr 2 hurs. NOTE: Fd shuld nt remain in the ven after the HOLD functin has ended. Fd safe temperature has been established at 140 F belw which bacteria will grw. OVEN USE (Befre Cking) WARNING: WARNING: WARNING: D nt line the ven bttm with fil r cver it with any material. Yur ven has been manufactured fr easy cleaning f spills and siling. Lining with fil r cvering will negatively affect the cking perfrmance f yur ven and may cause fire hazards. Psitin ven racks when the ven is cl. If the ven is ht and racks must be repsitined, always use clean, dry pt hlders t prevent steam burns. T prevent unnecessary drs, always clean large spills r fd particles frm the ven prir t heating. PREPARATION Befre yu start cking, prepare the fllwing: Check timing fr preparatin and cking f all dishes prir t starting fr gd meal planning. Have yur fd, ingredients, spices, etc, ready and all required tls handy (ven mitts, tngs, spns, basting brushes, etc.) Knw yur recipe and have it handy fr reference. Knw yur set temperature, apprximate cking time (and fd weight if time is weight based), internal dneness temperature. Prepare an area fr ht fds ut f the ven. Gd preparatin can prevent injury, damage, r ther mishaps. 11

13 POSITIONING OVEN RACKS Yur ven cmes with Capital Rller Racks which effrtlessly mve in and ut f the ven n bearing rllers. T cmpletely remve a rack frm the ven, befre the ven is ht, grasp the rack n bth the right and left sides and lift the rack up while allwing the rller brackets t rtate dwnward. This will release the rack frm the retaining grves in the ven side wall. T insert a rack, determine the desired rack psitin and, with the rller brackets facing dwn, place the rack int the ven at the desired height. Rtate the rller brackets up twards the walls f the ven while psitining the wheels within the desired psitining grves. Make sure all fur rllers are seated within the grves fr a secure rack psitin. SETTING THE OVEN Knw which ven mde is t be used and the temperature setting. DOUBLE: If setting a Duble Oven either the UPPER r LOWER ven must be selected by pressing ne f the cntrl panel buttns. The selected ven buttn will be indicated by a small light in the center f the buttn. Each ven must be set separately and can use independent mdes. If SELF CLEAN is used in either ven, the ther ven will nt be functinal until the SELF CLEAN cycle is cmplete. Press the MODE dial t start MODE selectin. All MODE icns will illuminate. Rtate the MODE dial t tggle between mdes. Mdes will change frm tp t bttm when the dial is turned clckwise and bttm t tp when turned cunterclckwise. When the desired mde is highlighted, check the set temperature next t the Time f Day display. Different mdes will display different default temperatures based n typical recipe settings. If the temperature needs t be adjusted, use the TIME/TEMPERATURE dial t adjust up r dwn. When the mde and temperature have been crrectly selected, press the START buttn t begin. NOTE: If START is nt pressed within 10 secnds, the selected mde and temperature will be cancelled and the display will return t Time f Day r the active functins f the ppsite ven f a duble ven. 12

14 WHILE THE OVEN IS RUNNING When a cking mde is started the PRE icn will appear in the clck display. This indicates the ven is Pre-Heating. BROIL mde des nt use a Pre-Heat cycle. The displayed temperature will increase until the set temperature is reached. When the set temperature is reached the ven will sund a beep tne and the PRE icn will turn ff. Once the set temperature has been reached it will be displayed cntinuusly. DOUBLE: T view the ppsite ven status f a duble ven when bth are being used, press the UPPER r LOWER buttns t tggle the display. The cnvectin fan autmatically turns n in Pre-Heat and ff when the ven reaches temperature (unless a Cnvectin mde is selected). While the ven is in use an ON icn will turn n and ff r flash. Once heated yur ven will cycle the heating elements nly as required t maintain the set temperature f the ven. When the ON icn is n, the heating elements are turned n and when it is nt visible the heating elements are ff. When the ON icn is flashing the heaters are abut t turn n r ff. The ven uses a cling fan t keep the ven cl. The cling fan turns n autmatically when the ven inside temperature reaches 300 F and turns ff when the ven cls t 200 F. BROIL and SELF CLEAN mdes turn the cling fan n immediately upn starting the mde. Keep the dr clsed as ften as pssible t maintain a unifrm temperature in the ven. The ven was designed t perate in all mdes (including BROIL) with the dr cmpletely clsed. IMPORTANT: If the ven dr is left pen fr a perid f time while cking r the temperature setting is increased by 150 r mre, the ven will g int a rapid recvery mde. This is the same heating as PRE HEAT and uses intense heat frm the BROIL, BAKE, and CONVECTION Elements as well as the Cnvectin Fan t heat the ven quickly. This can cause fds t burn. TURNING THE OVEN OFF T cancel a cking mde and turn the ven Off use the CANCEL buttn. DOUBLE: The left side CANCEL buttn will cancel nly the UPPER ven functins. The right side CANCEL buttn will nly cancel the LOWER ven functins. The CANCEL buttn will nt turn ff the ven lights. Use the LIGHT buttn. 13

15 SECURING THE OVEN CONTROL The ven cntrl can be lcked int a Secure mde t prevent accidentally turning the ven by children r when cleaning. The Secure mde will disable all buttns and switches except the CANCEL buttns. T Secure the ven cntrl, press and hld the CANCEL buttn (either buttn n a duble ven) fr 5 secnds. The ven cntrl will beep and the display will shw OFF in the temperature readut areas f the display. T unlck the ven cntrl, press and hld the CANCEL buttn (either buttn n a duble ven) fr 5 secnds. The ven cntrl will beep and the display will n lnger shw OFF. The ven cntrl is unlcked and ready fr use. ADJUSTING THE OVEN MODE AND/OR TEMPERATURE If the temperature must be adjusted in the current mde press the TIME/TEMP dial/buttn nce. This will enter the TEMPERATURE adjustment mde. DOUBLE: Fr a duble ven, select the desired ven first by pressing either the UPPER r LOWER buttns. Each ven must be altered separately. Rtate the TIME/TEMPERATURE dial t the desired temperature. Press START t set the new temperature. NOTE: If START is nt pressed within 10 secnds, the previusly set temperature will remain the current setting and the mde will cntinue unchanged. 16 SETTING TIMERS The Timers are timers nly and d nt affect ven functins. Yur ven has tw independent cuntdwn timers: TIMER 1 and TIMER 2. The Timers may each be set frm 5 secnds t 11 hurs 50 minutes. T set, press either TIMER 1 r TIMER 2 buttns (they each have the same functins). Rtate the TIMER/TEMP dial clckwise t increase the timer setting. Press the START buttn t begin the timer cuntdwn. NOTE: If START is nt pressed within 10 secnds, the timer will be cancelled. If a timer is running yu may change the timer value by pressing the TIMER 1 r 2 buttn (depending n which is t be changed), and rtating the TIME/TEMP dial t the desired time and pressing START. NOTE: If START is nt pressed within 10 secnds, the timer will revert t the previusly running timer. T cancel a timer, press the TIMER key twice and the setting will change t 0:00 and will revert t the standard display after 10 secnds. Alternately yu may press and hld the TIMER buttn fr 3 secnds and the timer will be cancelled. If the timer setting r remaining time is mre than 1 hur, a HR icn will be displayed and the time will be in hurs and minutes. If the setting r remaining time is less than 1 hur the HR icn will be ff and the time will be in minutes and secnds. TURNING LIGHTS ON AND OFF The ven lights may be turned n and ff as desired t better view cking fd. Press the LIGHT buttn t turn the lights n r ff. Bth the upper and lwer ven lights will turn n when the light switch is actuated n a duble ven. Oven lights DO NOT perate during Self Clean. 15

17 SPECIAL FUNCTIONS SELF CLEAN WARNING: Remve all racks, cking vessels, utensils, meat prbe and all ther items frm the ven prir t cleaning. IMPORTANT: Clean excess spillage, grease and ther cking byprducts frm the ven prir t Self Cleaning. WARNING: D nt line the ven with aluminum fil r ther materials. They may melt, burn r cause permanent damage t the ven. WARNING: D nt tuch the uter surfaces f the ven during the Self-Clean cycle as the ven may be ht. WARNING: The ven dr is autmatically lcked during the Self Clean cycle. D nt try and pen r frce the dr pen. Damage t the ven may ccur. NOTE: Sme smke and drs are nrmally present during the Self Clean cycle as the fd residue burns ff. NOTE: Sme nise may ccur during the cleaning cycle and when the ven is cling after the cycle ends. Metallic clicking and ppping sunds are nrmal and are caused by the heat expanding r cntracting the metal f the ven. The Self Clean functin heats the ven t temperatures that burn ff mst fd residue in the ven. The ven can be wiped dwn with mist spnge after cling t remve the ashen residue. The Self Clean functin runs fr 3 hurs and takes apprximately an additinal 1 t 2 hurs t cl dwn. The ven dr autmatically lcks when the Self Clean functin is started and will unlck autmatically when the ven cls t less than 400 F. T use SELF CLEAN : Fllw all listed WARNINGS Select an ven n a duble ven r press the MODE dial and rtate t select SELF CLEAN. Press START. The dr latch will lck the dr and a LOCK icn will be displayed n the cntrl. The PRE icn and ON icn will be displayed n the cntrl t indicate the ven is heating. PRE will be displayed fr apprximately 45 minutes. This is used t rapidly heat up the ven t SELF CLEAN temperatures. The ON icn will display when the heaters are n t maintain Self Clean temperatures. The cntrl will display a cuntdwn f 3 hurs in the clck sectin. When the Self Clean cycle is cmplete the Time f Day will be displayed and the LOCK icn will remain n until the ven is cl enugh fr the dr t unlck (apprximately 400 F). When the ven is cl the interir may be wiped dwn with a damp spnge and mild detergent t remve the ash residue. If slids remain stuck t the ven bttm glass, they may be remved by lightly scraping with a flat razr blade (Use Cautin when using a razr t prevent injury). 16

18 CONVECTION (Upper and Lwer Oven n Duble) The CONVECTION buttn turns the ven Cnvectin Fan n during a cking mde prviding an additinal fur mdes f cking. CONVECTION used in cmbinatin with BAKE, DELICATE, BAKE, BROIL, r ROAST uses the same heat surces as the standard set mde but evenly mves the heated air thrughut the ven. When cking is cmplete and a mde is cancelled, the CONVECTION fan will autmatically turn ff. T use CONVECTION: After an ven is pre-heated, select the ven n a duble ven by pressing either UPPER r LOWER. Press the CONVECTION buttn. The buttn will illuminate and the Cnvectin Fan will turn n. The Cnvectin Fan may be turned ff at any time by selecting the desired ven and pressing the CONVECTION buttn again. The buttn light and fan will turn ff. The Cnvectin Fan will als turn ff when an ven cking mde is cancelled. NOTE: The Cnvectin Fan autmatically turns ON during PRE HEAT and OFF at the end f PRE HEAT unless therwise selected. NOTE: CONVECTION is nt selectable during SELF CLEAN. IMPORTANT: If the ven dr is left pen fr a perid f time while cking r the temperature setting is increased by 150 r mre, the ven will g int a rapid recvery mde. This is the same heating as PRE HEAT and uses intense heat frm the BROIL, BAKE, and CONVECTION Elements as well as the Cnvectin Fan t heat the ven quickly. This may cause fds t burn. ROTISSERIE (Upper Oven nly n Duble) WARNING: D nt place fd r the drip pan in the ven until the Pre-Heat cycle is cmplete! The Pre-Heat cycle generates intense heat frm the bttm, tp and rear f the ven and will burn fd and may cause damage t any items placed n the ven bttm r the ven itself. WARNING: Never attempt t use the MEAT PROBE with the ROTISSERIE. WARNING: Always turn the ROTISSERIE mtr OFF when checking the fd temperature with and instant read thermmeter. IMPORTANT: Always check fd clearances t the ven walls and drip pan prir t heating the ven Make adjustments prir t turning n the BROILER. T check clearances, place the fd n the Rtisserie rd with the frks secured and place in a cl ven. Turn the Rtisserie mtr On and make sure n cntact is made with any surfaces. IMPORTANT: Always place a drip pan belw the fd when Rtisserie cking in yur ven. This will catch all drippings during cking. IMPORTANT: BROIL is the cking mde fr use with ROTISSERIE. DO NOT use BAKE, DELICATE BAKE, r ROAST since these all use bttm heat and will directly heat the drip pan and nt the fd. 17

Fd may becme lse during cking and may require repsitining f the Rtisserie frks r securing the fd with cking string. The ROTISSERIE buttn turns the Rtisserie mtr ON and OFF when Rtisserie cking. The ROTISSERIE buttn illuminates when ON. The ROTISSERIE buttn can be turned n and ff at any time except when Self Clean is selected. This allws the ck t verify the fd is securely fastened t the Rtisserie Spit Rd with the Rtisserie Frks prir t placing in a ht ven. This als allws clearances between the fd and the tp f the ven and the drip pan placed n the bttm f the ven prir t Pre-Heating. IMPORTANT: It is recmmended that the BROIL mde be CANCELLED anytime fd is being inserted r remved frm the ven when using the ROTISSERIE t prevent burns. The BROIL element heats rapidly and will have minimal affect upn cking if turned OFF when inserting r remving fd. MOIST (Single Oven r Upper Oven nly n Duble) The MOIST feature adds a small amunt f water t the ven every minute when cking, resulting in mister fds. Water is stred in a Water Reservir behind the dr and flws int an Evapratin Tray belw the cnvectin baffle inside the ven. IMPORTANT: ONLY USE DISTILLED WATER TO FILL THE RESERVOIR. Regular tap water will cause a build up f minerals in the rifice f the mist system and may cause clgging. NOTE: The Mist feature will nt functin unless a cking mde is active and Pre-Heat is cmplete. WARNING: Mist mde shuld nly be used with a temperature setting ver 250 F. Lwer temperatures will nt evaprate the water and water will accumulate in the evapratin tray. NOTE: The Mist feature will nt functin in SELF CLEAN r BROIL. IMPORTANT: Open the dr as few times as pssible during MOIST cking. Frequent pening f the dr will allw the misture and heat t escape the ven and will prevent the mde frm being effective. IMPORTANT: Prir t turning the ven n, make sure the Evapratin Tray is installed in the back f the ven. T use the MOIST feature, first add distilled water t the water reservir. Open the ven dr and access the water reservir thrugh the panel in the upper right side f the intake slts. Pull the reservir ut until the filling prt is in frnt f the cntrl panel. Remve the vented plug frm the fill prt and pur clean distilled water int the tube t just belw the tp. DO NOT OVERFLOW! Replace the plug snugly. Push the reservir back int the vent and replace and secure the reservir cver. Set the desired cking mde and temperature and allw the ven t Pre Heat. The MOIST feature will nt begin t functin until the PRE HEAT cycle is cmplete. 18

20 Press the MOIST buttn t allw the ven t add water int the ven cavity. When activated, the MOIST buttn will be illuminated. Only use the MOIST feature with ven settings abve 250 F. If the ven temperature is t lw the water will nt evaprate and may drip nt the ven bttm. The MOIST mde will autmatically turn Off when the cking mde is cancelled r can be manually turned Off at any time by pressing the MOIST buttn. When turned Off, the MOIST buttn light will turn Off. IMPORTANT: The water reservir shuld be emptied after every use. T empty the reservir d the fllwing: Turn the ven OFF and wait until the ven is cl. Open the reservir access dr behind the ven dr. Pull the reservir ut until frnt f the tube clears the cntrl panel. Place a bwl r ther receptacle belw the tube muth and remve the plug and allw any remaining water t drain. Replace the plug snugly and push the reservir back int psitin. CLEANING THE RESERVOIR The water reservir shuld be cleaned every six mnths r prir t use after a lng perid f disuse. T clean the reservir, pen the reservir access panel and slide it frward t allw access t the tube cnnectr n the bttm right side. Place a pan r bwl belw the reservir t catch any water that may be inside when remving the feed tube. Use pliers r a crescent wrench t lsen the cnnecting nut. Carefully remve the tube frm the reservir bdy and allw any water t drain int the bwl. Remve bth plugs frm the reservir and set aside fr replacement after cleaning. Partially fill with very ht water and a small amunt f dishwashing liquid and agitate t clean. Rinse the reservir thrughly with clean ht water until n detergent remains. Replace the plugs in the reservir and slide back int the ven until the frnt is just clear f the cntrl panel. Replace the feed tube in the reservir and hand tighten the nut nt the fitting. Use a crescent wrench r pliers t tighten an additinal ¼ t ½ turn. Replace the reservir in the ven and clse the cver. CLEANING THE EVAPORATION TRAY CAUTION! Only clean the Evapratin Tray when the ven is cl! The Evapratin Tray is inside the ven lcated directly belw the cnvectin baffle. Lift the Evapratin Tray up and remve frm the ven. Use a damp clth t and mild nn-abrasive detergent t wipe ut the interir f the cntainer prir t use. Fd particles and grease frm cking may fall int the cntainer and get trapped. IMPORTANT! Always remve the evapratin tray frm the ven prir t self cleaning. The tray is manufactured f high quality stainless steel and will disclr if left in the ven during self clean. 19

21 PROBE (Upper and Lwer Oven n Duble) PROBE allws the ven t mnitr the fd temperature as it cks and stps cking when the fd is dne. The Meat Prbe is inserted int the fd t mnitr the internal temperature. When the fd is dne, the cking mde will change t HOLD mde fr tw hurs. The PROBE functin is used in cnjunctin with a cking mde set t the recipe cking temperature. WARNING: The PROBE functin cannt be used with BROIL r SELF CLEAN mdes t prevent damage t the Meat Prbe. WARNING: The PROBE shuld nt be used when cking at temperatures higher than 450 F. T use the PROBE functin the fllwing steps are t be fllwed: Set rack psitins when the ven is cl. Set the desired cking mde and cking temperature. Allw the ven t cmplete the Pre-Heat cycle. Press the PROBE buttn. Set the desired internal temperature f the fd t be cked. Insert the sharp end f the Meat Prbe int the thickest sectin f the fd (i.e. the center f a rast r the thigh f a turkey). Plug the ppsite end f the prbe int the Meat Prbe Scket. The ven will shw the internal temperature f the fd in the temperature display. NOTE: When the Meat Prbe is placed int cld fd the temperature will nt indicate lwer than 95 F. When the desired temperature is achieved, the ven will g int HOLD mde, which will lwer the ven temperature setting t 150 F and will remain n fr 2 hurs. WARNING: T maintain fd safe cnditins, fd shuld be remved frm the ven prir t the end f the HOLD cycle. IMPORTANT: T prevent pssible damage, d nt fully immerse the prbe in water when cleaning. When washing the Meat Prbe, use water with a mild detergent and wipe clean the metal skewer sectin, bdy and crd. 20

22 DELAY COOK Yur ven can be set t start cking at a desired time by presetting a cking mde, temperature, and setting a start time in DELAY COOK. WARNING: When using DELAY COOK, always maintain fd safe habits and be extremely careful f access t the ven by children r adults wh may be injured r cause damage by a live ven. WARNING: D nt use DELAY COOK fr fds subject t spiling (dairy prducts, eggs, uncked pultry, etc. IMPORTANT: When using DELAY COOK the Pre-Heat cycle is eliminated t prevent fd frm burning. The ven will take an additinal minutes t heat t the set temperature. Please take nte f the additinal time that may be required t heat the ven when using DELAY COOK. T use DELAY COOK, first set the ven racks t the desired psitin while the ven is cl. Fr a Duble Oven, select the desired cking ven. Select and set the cking mde and cking temperature. Press the DELAY COOK buttn. Use the TIME/TEMP dial t adjust the desired start time. DELAY COOK may be used with the MEAT PROBE and TIMED COOK functins if desired. These mdes are set nrmally as described in this manual. DELAY COOK may be used with the Self Clean functin. T view the setting, press TIMED COOK (fr a duble press the active ven, either UPPER r LOWER then TIMED COOK) WARNING: When using DELAY COOK, with the Self Clean functin, make sure t remve all racks, cking vessels, utensils, wipe up excess spills and remve large fd particles prir t setting the ven. 23 TIMED COOK Yur ven can be set t end cking after a set time has passed by using the TIMED COOK functin. T set TIMED COOK a cking mde must be active (r set with DELAY COOK). Press the TIMED COOK buttn t enter the duratin time screen. Use the TIME/TEMP dial t set the duratin in minutes, r hurs and minutes. Press START t activate the TIMED COOK functin. T view the setting, press TIMED COOK (fr a duble press the active ven, either UPPER r LOWER then TIMED COOK) At the end f a TIMED COOK mde, the ven will change frm the cking mde t HOLD mde. HOLD mde will lwer the ven temperature setting t 150 F and will remain n fr 2 hurs. SABBATH MODE Sabbath mde will turn ff beepers, disable ven lights, will maintain cnstant readuts f SAb in the temperature readut zne, will allw ven temperature t be changed withut changing displays, disables ven lights. SABBATH can be selected fr the fllwing cking mdes; BAKE, DELICATE BAKE, ROAST, and PERFECT CONVECTION. T enter int SABBATH mde, select an ven (fr a duble ven) and start the desired mde and temperature. After PRE HEAT is cmplete, press and hld the START buttn fr 4-5 secnds. The ven will beep while the START buttn is being held. The ven cntrl will tne and SAb will be displayed in the temperature area f the cntrl fr the selected ven. Oven temperature can be changed in SABBATH mde but with n display change. T change ven set temperature, select the desired ven by pressing the UPPER r LOWER BUTTON. Press and rtate the temperature dial, clckwise t increase and cunterclckwise t decrease temperature. The temperature can nly be adjusted within the nrmal limits f the ven (135 F t 550 F) Temperature changes will be implemented by the cntrl within a randm time f secnds. When in Sabbath mde the ven will remain ON in the set mde until turned OFF. The CANCEL r turn Off SABBATH mde, press the CANCEL buttn fr the desired ven. NOTE: SABBATH must be reset fr each use after cancelling. 22

24 TIPS General Always center yur ckware within the ven frm frnt t back and side t side t ensure even heating. Darker cntainers will absrb mre heat and will prvide a darker r crisper crust while lighter pans and vessels will reflect mre heat and prvide a mre unifrm heat. Use lw sided r flat cking vessels, such as ckie sheets, when cking with cnvectin and even heat is desired arund the fd. This will allw the heated air mving within the ven t envelpe the fd and prvide even heating. High sided vessels will restrict the heated air flw and may affect even cking. When cking large rasts r pultry, it is recmmended t use a V-rack within a rasting pan. This allws even heating f the fd and catches the drippings fr flavr. Fllw the recmmendatins f recipes r ckbks fr specific types f recmmended ckware. Open the ven dr nly when required! Opening the dr allws heat t escape and requires the ven t recver which can affect cking. Check fd by using the ven light and viewing thrugh the dr glass whenever pssible. Never use a cking vessel that cmpletely cver the ven frm side t side and frnt t back. There must be rm fr heat t circulate within the ven t allw even cking. Fd cntinues t ck even after remving frm the ven. T prevent vercking, remve the fd when the internal temperature is slightly belw the desired temperature. Allw the fd t rest and mnitr temperature fr dneness. If a recipe, such as frzen pizza, requires fd be placed in a cld ven, use DELAY COOK, set fr a shrt delay, t eliminate PRE HEAT. Briling Always bril with the ven dr cmpletely clsed. Check yur rack psitin with the fd n the bril pan when the ven is cld. If the fd is t clse t the briler it may burn. The briler rapidly prduces intense heat! Rtisserie Cking Always check clearances prir t heating the ven! Always spend the extra time required t balance the fd n the rtisserie spit. Try and rll the spit in yur hands prir t placing in the ven. If it is unbalanced, repsitin the frks until it rlls well. An unbalanced lad can ck unevenly, and cause the fd t cme lse during cking, etc. Rtisserie cking is a slw cking prcess. Lwer the temperature f the BROILER setting and peridically check dneness with a meat thermmeter when the rtisserie is stpped. Fds selected fr ROTISSERIE cking in the ven shuld be sized s they are nt t clse t the BROIL glass when secured. If it is t clse the utside will ver ck prir t the inside being cked. Multi Rack Cking If cking n multiple racks the PERFECT CONVECTION mde is recmmended. All ther mdes will prvide less even heat n the varius levels f cking. When multi-rack cking, leave as much rm arund each cking vessel as pssible t allw the heated air t flw as evenly as pssible thrughut the ven and arund the fd. 23

MEAT PROBE: Clean the meat prbe by lightly scrubbing the skewer, crd, and plug husing with mild detergent and water after each use. D nt fully immerse the meat prbe. Lightly wipe the plug end with a mist clth and dry after cleaning. MEAT PROBE SOCKET: Wipe the area arund the meat prbe scket accrding t the table belw. Prevent water frm directly entering the scket. Remve fd r cleaning prducts that may enter the pening f the scket with a tthpick r ther nnmetallic implement. ROTISSERIE MOTOR SOCKET: Wipe the area arund the rtisserie mtr scket accrding t the table belw. Remve any fd that may be stuck t the scket. ROTISSERIE SPIT ROD AND FORKS: WARNING: Use cautin when cleaning the spit rd and frks. They are sharp and can cause injury! Wash the rtisserie spit rd and frks with mild detergent and/r mild abrasive. T prevent sticking, remve and cleaning the threaded fasteners n the frks and clean separately, then replace after cleaning. Rtisserie frks are dishwasher safe.
