3 INTERFACE The ADVANCE PLUS ven has an 8 TFT + tuch-screen (frmat 16/9), used fr cntrlling all the functins f the ven, as well as displaying all the ven infrmatin. Under the QT platfrm it uses the Windws CE perating system. Main screens: Screen OFF Initial Screen Fagr Cking Fagr Easy Menu The screen is switched n/ff with the main ON/OFFswitch. When the screen is switched n, the Initial Screen is displayed, unless the ven was switched ff in Fagr Easy r Exhibitin mde, in which case the screen fr the crrespnding mde is displayed. The parameters displayed n screen crrespnd t thse used fr the last peratin, using the default values if this is the first time the ven is switched n r in rder t re-establish the factry parameters. In additin t the mains switch, the START/STOP buttn can be used fr switching the ven n r ff, and switching ff the adjustment currently being perfrmed. SCREEN OFF The screen is shwn belw in ff mde, with the cnfiguratin selected by the user, wh can select whether they wish t view the date and/r time in additin t the required text. If the screen remains in OFF mde fr 5 minutes, the back-light will autmatically switch ff. T re-activate it, just tuch the screen. Page 3 f 42

4 START-UP DISPLAY Each f the available ptins is defined n the main screen f the ven. If the ven is adjusting, it is nt pssible t access the fllwing ptins Fagr Cking, Fagr Easy y Menu. Reset gas. The screen nly displays whether a burner is blcked in an gas ven, accmpanied by a text message that indicates that the burner is blcked. T unblck the burner, just press this buttn, creating the sequence stipulated fr unblcking the burners. Menu (7th rw 1st buttn): Access t ven s main menu. SAT (7th rw 2nd buttn): Passwrd prtected functin permitting access t the different ptins available t the SAT technician r the internal peratr when cnfiguring r checking the ven. T enable the buttn in questin, when in Cnvectin r Mixed mde with the time functin, enter the values 989 in temperature (300 ºC displayed n screen) and 898 in time (9:38 displayed). Fagr Cking (7th rw 3rd buttn): Press this buttn t g t the ven autmatic perating mde. This includes recipes prgrammed at the factry, divided int families, tgether with persnal user-defined prgrammes. Fagr Easy (7th rw 4th buttn): Buttn t g t ven peratin in simple mde. Page 4 f 42

5 ON/OFF The ven is switched n/ff with the mainon/off ON/OFFswitch. Each time that the ven is switched n, the last-used values are displayed. If this is the first time the ven is switched n, the defect values are displayed. When the ven is switched n, it adpts the last used parameters. If the functin is changed, the values f the functin being used are stred and are reladed if yu return t this functin. OFF ON OPERATING MODE Select mde user requires fr ven. The selected mde is highlighted. The available mdes are listed belw: Cnvectin Mixed Regeneratin Steam When the ven is switched n, it adpts the last used parameters. 6 HUMIDITY This sectin shws the humidity level selected fr the ven. Blue represents mist air, red dry air, while when the icn is ff r black (nly in Cnvectin mde), the required humidity level is displayed. These are the default ranges and values f each perating mde: Cnvectin in: Range (0 100 ºC) 0% by default Mixed: Range (0 100 ºC) 50% by default Regeneratin: Range (80 ºC) 80% by default Steam: Range (100 ºC) 100 by default T mdify the humidity level, press and. The increase /decrease is in steps f 10%. The buttns are nly enabled in the Cnvectin r Mixed mde, as the humidity value is fixed in the ther tw perating mdes. TEMPERATURE This sectin shws the true chamber temperature and that selected by the user. The temperature shwn n the left side f the screen is the true temperature in the chamber. The temperature shwn n the right side f the screen shws the temperature selected by the user. The range f temperatures fr each perating mde is shwn belw: Cnvectin: Range ( ºC). 160 ºC by default Mixed: Range ( ºC). 140 ºC by default Regeneratin: Range ( ºC). 120 ºC by default Steam: Range (20 99 ºC9. 99 ºC by default Temperature selectin: press the central buttn required value and cnfirm r cancel with OK / cancel. which enables the selectin using numbers. Select the The temperature up /dwn buttns allw the temperature setting in the chamber t be mdified in units within the established range. If either f the buttns is pressed fr mre than 2 secnds, the increase / decrease is in steps f 10. When the ven is in delta functin these buttns are nt displayed. It is pssible t view the true value f the fur thermcuples (TC, TV, TN and TG). Therefre, the Pwer/Speed buttn shuld be pressed fr 5 secnds in the Initial Screen. The ven exits this functin when the user releases the buttn, returning t the values with which it was perating. Page 6 f 42

7 COOKING WITH TIME FUNCTION Cking is accrding t the temperature and time selected. 1. Select the perating mde. 2. Select the humidity value. 3. Select the required ven temperature. 4. Select the required time 5. Press Start. The up /dwn buttns allw the chamber temperature and time settings t be changed. If either f the buttns is pressed fr mre than 2 secnds, the increase / decrease is in steps f 10. If the ven is n and either f these tw buttns is pressed, the remaining time will vary in the same prprtin as the temperature setting is increased / decreased. On cmpletin f the selected time, a visual/acustic warning will start. T switch ff the alarm, press the START/STOP buttn r pen the dr. If the dr is nt pened, r if the START/STOP buttn is nt pressed, the acustic/visual warning is repeated fr 30 secnds every 3 minutes, up t a maximum f 15 minutes. PREHEATING T preheat the ven it must be switched ff and the required temperature must be higher than the temperature in the chamber. 1. Select the perating mde. 2. Select the required ven temperature. 3. Press time / spike / Delta display 4. Select time 0 and press OK. 5. Press Start. COOKING WITH SPIKE FUNCTION pint. 8 COOKING WITH DELTA FUNCTION pint. Cking takes place at a temperature f 50ºC higher than the temperature in the centre f the fd. The prbe shuld pass t the centre f the fd t ensure that the fd is crrectly cked in the mst central 1. Select the Delta ptin functin with the time/spike/delta ptin selectr. 2. Select the temperature required at the centre f the fd. 3. Insert the prbe spike in the fd. 4. Clse the dr and press Start. After pressing the start/stp buttn, the ven starts. When the temperature at the centre f the fd reaches the value selected, the buzzer is heard. The up /dwn buttns allw the temperature setting at the centre f the fd t be changed. If either f the buttns is pressed fr mre than 2 secnds, the increase / decrease is in steps f 10. By pressing the time/spike/delta display buttns, the values are selected numerically. When the true temperature f the cre reaches the selected value, an acustic warning is heard. T switch ff the alarm, press the START/STOP buttn r pen the dr. If the dr is nt pened, r if the START/STOP buttn is nt pressed, the acustic warning is repeated fr 30 secnds every 3 minutes, up t a maximum f 15 minutes. HUMIDIFIER This functin is used t inject the water int the heating system. T d s, press HUMIDIFY. Injectin ccurs as lng as the buttn is pressed. This functin is used t btain: Excellent rising f bakery prducts thanks t the rapid intrductin f misture. Sft shine t baked prducts. It shuld be used fr shrt perids f time. COOL DOWN The cl dwn functin allws the ven t cl dwn frm high temperatures. It nly perates if the ven temperature is abve 45ºC. 1. On the main screen, press cl dwn. 2. Open the dr. 3. The cycle is interrupted when the ven temperature reaches 45ºC, the dr is clsed, r if the ff buttn is pressed. SAFETY MEASURES: During this cycle the fan cver and the tray guides shuld be securely fastened in their psitin. Warning: D nt cl the ven by directly applying cld water in the tub. Page 8 f 42

9 FAN SPEED & POWER This functin is used t vary the ven pwer (heat) and fan speed. There are 4 ptins: Maximum pwer / maximum speed. Minimum pwer / maximum speed. Minimum pwer / average speed. Minimum pwer / minimum speed. MAIN MENU The remaining functins f the ven are fund in the main menu, except fr the SAT submenu, which is in an additinal screen that can nly be entered by the technician, using a special cmbinatin f keys in the Initial Screen. MENU The Menu ptin displays a screen with 6 additinal ptins fr the user. Page 9 f 42

10 SYSTEMS The wash screen allws yu t select between 5 different wash prgrammes. When a prgramme is activated, if the chamber temperature is higher than the wash temperature (60ºC), the fan is switched n and the HIGH TEMPERATURE warning is displayed fr the pening f the dr. When the dr is pened, the screen displays the message COOLING until the wash temperature is reached. When the dr is clsed and the START/STOPpressed, the selected prgramme starts. If the prgramme is abrted (the ven is switched ff r there is a pwer failure), next time the ven starts, the screen will indicate that the wash cycle was interrupted and the ven will run a rinse cycle t wash any sap which may have been left in the chamber. Press START/STOP t begin r end the cleaning prcess. OVEN RECOMMENDED SOAP 061 and 101 1/3 (075 ml.) 102 ½ (112 ml.) 201 and 202 2/3 (150 ml.) Washing prgrammes: 1 Rapid rinse 2 Gentle wash 3 Medium wash 4 Intense wash 5 Semi-autmatic wash Fr each f the wash prgrammes, fllw the instructins shwn n the screen. The cl dwn prgramme shuld be cmpleted befre starting a wash. Cleaning prcess: 1. LZ and Ms/Mb perate. The display must indicate the chamber temperature and the time left t cmplete the selected prgramme. 2. The fluepipe behaves as fllws: Electric ven: Fluepipe pen Gas ven: Fluepipe clsed (therwise water will leak ut). 3. VAC perates fr 3 secnds, the level f the biler shuld drp belw the minimum level. If the lw level is nt reached, after 5 re-perate the VAC fr a further 3 and cntinue s. If after 1 minute the minimum level is nt reached, the crrespnding errr is displayed. (See table f errrs) 4. Operate VDV until maximum level is reached. If this is nt reached within 7 minutes, the crrespnding errr shuld be displayed. 5. Nw cntinue with the specificatins fr each wash prgramme. 6. Lastly, everything is switched ff, all the utputs are set t zer and the display shws the message END OF WASH. If the dr is pened during a wash cycle, the prgramme stps, and restarts when the dr is clsed. There is an ptin n the screen t cancel the current wash prgramme, the peratin is abrted when START/STOP this is pressed, and prceeds as fllws if the drying phase has nt been reached (if it has, the wash cycle is cnsidered t have ended). The message WASH INTERRUPTED is displayed n the screen. When the user cnfirms this message, the cycle prceeds t the rinse stage, displaying the message RINSING n the screen. Mc activated fr 30 (drainage clses). The rinse cycle is run. Similarly, if the cntrller was switched ff during the wash cycle withut reaching the drying cycle, the abve sequence is fllwed when the ven is switched back n. If the ven is switched ff during the rinse phase, the prgramme will restart at the pint at which it was interrupted when the ven is switched back n. There is an ptin t abrt the rinse cycle. 11 Rapid rinse The TFT displays the name f the wash prgramme 30 secnds Mc activated (drainage clses) and CV until TG reaches 70 ºC. 50 secnds Mc activated and VAC secnds Mc activated, CV if TC < 65 ºC, D/I, M/P and Mba (wash pump mtr) (8 ON 10 OFF). 36 secnds Mc activated and Mba (8 ON 10 OFF). 90 secnds Mc is activated, CV if TC<65 ºC, M/P and Mba (8 ON 10 OFF). Drying In Cnvectin mde until reaching 160 ºC (Withut rtatin inverter, nly M/P is activated and Ms/Mb- fluepipe mtr). The message DRYING is displayed. Gentle Wash Befre starting t wash, the ven displays the message INSERT SOAP, and waits fr user cnfirmatin befre cntinuing with the wash cycle. 15 DELAYED PROGRAMME The delayed prgramme allws yu t prgramme the ven t ck and be washed at the time yu require. 1. Select Menu ptin. 2. Select delayed prgramming ptin. 3. Select time by pressing. 4. Select day by pressing. 5. Select prgramme, recipe r wash. 6. Press. The prgramme selectr allws yu t select the ven parameters (temperature, humidity, time, fan speed). The recipe selectr allws yu t select any stred recipe. The wash selectr allws yu t select any wash prgramme. During the delayed prgramming, the ven may nt be used. MULTI-TRAY TRAY FUNCTION The multi-tray functin allws each f the trays t be prgrammed independently. 1. Select the perating mde. 2. Select the humidity value Select the required ven temperature Press the menu buttn. 5. Press the multi-tray buttn 6. Select trays Enter required time. 8. Press OK Press Start.. Page 15 f 42

16 DESCALING This functin is used t access the descaling cycle. 1. Press the descaling buttn. 2. Select time (30 t 480 min.) 120 min by default. 3. Warning SPRAY DESCALER (3 minutes). 4. Insert descaler in steam generatr (rear sectin f the ven). 5. Cnfirm. 6. On cmpletin END DESCALING displayed WARNING! The descaling functin is perfrmed by the SAT. All the relevant safety measures fr preventing accidents shuld be bserved. Prcedure invlving chemical prducts. The chemical prduct used must have a phsphric acid base at a cncentratin f %. It may cntain an anti-faming agent. A chemical cncentratin f apprximately 10 15% f the capacity shuld be used in the biler. This cncentratin depends n the degree f lime scale saturatin and the effectiveness f the chemical prduct. Please refer t the supplier fr advice n the methd f applicatin. When the ver autmatically detects an excess level f lime scale in the pipes, the text DESCALING flashes n the display. The speed f the flash increases with the need fr decaling, and when descaling is bligatry the message is permanently lit and the biler heating is blcked (at this pint the ven nly perates in cnvectin mde). Lime scale detectin In any perating mde, if the TG prbe reaches: 125 ºC The message DESCALE is displayed in the upper text f the screen, and flashes every tw secnds. 140 ºC The message DESCALE is displayed in the upper text f the screen, and flashes every ne secnd. 155 ºC The message DESCALE is displayed in the upper text f the screen, and flashes every ½ secnd. 180 ºC The message DESCALE is displayed cntinuusly in the upper text f the screen, and the ven nly perates in Cnvectin mde. Once the message DESCALE has been displayed, it will nt disappear until descaling takes place, even thugh the TG temperature falls r if the ven is switched ff. The message reappears when the ven is switched n. Page 16 f 42

17 Prcedure fr descaling T descale, g t the DESCALE functin in the MENU ptin. The message displayed is SELECT. TIME, descaling time between 30 and 480 minutes (120 by default). Wait until the user cnfirms the selectin with the buttn n the wheel. Phase 1: VAC perates fr 3 minutes The message displayed is SPRAY DESCALER". Und the side panel f the ven and access the steam generatr. Und the descaling nut and pur the chemical prduct in the steam generatr. Tighten the nut after inserting the chemical prduct and cnfirm by pressing START. Phase 2: VDV perates until reaching the maximum level, the biler fills with descaler. Phase 3: CV perates until TG reaches 61ºC. When TG falls belw 58 ºC, CV enters again until reaching 61ºC, this cntinues fr the perid selected by the user. The display shws a cuntdwn fr the time remaining. Phase 4: VAC perates fr 3 minutes. Phase 5: VDV perates until reaching N.max. Phase 6: VAC perates fr 3 minutes. Phase 7: VDV perates until reaching N.max. Phase 8: Steam mde perates until TC reaches 95ºC. (except RG). Lastly, this functin ends and the message END DESCALING, is displayed, leaving all utputs at zer The current phase number ( FX DESCALE ) and the time remaining are displayed cntinuusly If during the descaling cycle the peratin is abrted by pressing the descaling buttn again r because the ven has been switched ff, prceed as fllws: If it has nt reached phase 2 The cycle is ended If it has reached r exceeded phase 2 The cycle ges t phase 4 If it has reached phase 4 The cycle ges t the phase in which it stpped There is an ptin t abrt the descaling prcess. 18 HACCP When the ven is perating with the Cre prbe r Delta, functin, the data with which it is perating must be stred in rder t cmply with current legislatin with respect t HACCP. The ven saves all the data fr the perating mde, Humidity, TC and TN (the lwest value between TN1 and TN5) every minute while yu remain in the functin in questin. The data are stred fr ne mnth. These data can be displayed n the screen r dwnladed t an external device using a de USB r Ethernet. Usage: 1. Cnnect the USB memry stick t the ven when it is switched ff. 2. Switch n the ven 3. Cnfirm the ptin START HACCP. 4. After the message END HACCP DOWNLOAD switch ff the ven 5. Remve the USB memry stick 6. Prcess the infrmatin in the Fagr HACCP applicatin CONFIGURE SYSTEM Page 18 f 42

19 LANGUAGE This allws yu t select between 27 different languages. Spanish is the default language. 1. Press the language buttn 2. Select the required language. Press the buttn, prgramme time and date. 2. Press the time buttn and select the time using the up /dwn buttns. 3. Press the date buttn and select the date using the up /dwn buttns. 20 The default setting is with the time and date enabled and withut any text. DELTA This setting allws yu t select the differential value fr the delta cking. The default value is 50ºC. 1. Press delta setting. 2. Select required value with the up / dwn buttns. ºC - ºF It is pssible t change frm degrees Celsius (ºC) t degrees Fahrenheit (ºF). Press the buttn t change frm ne t the ther. In this way, when the ven is switched n again, it starts in nrmal perating mde. There are 2 exhibitin cnfiguratins tins, depending n the selectin made by the user: Cntrl panel mde: Only the interface and utputs RG and LZ perate, all ther inputs/utputs are disabled and all errrs are ignred. The values f the TC and TN prbes are fixed. Wash mde: The ven runs the intense wash prgramme and cntinues in this cycle until the exhibitin mde is exited. 31 Autmatic drainage: Permits the cnfiguratin f the frequency with which the ven shuld drain the biler, that is, every s many hurs f the ven s peratin (all mdes except cnvectin, where TG > 60 ºC) the drainage cycle must be run 1 63 (Default setting: 24) There is an ptin t abrt the prcess by pressing START/STOP fr 5 secnds. Cndensatin time: Optin fr cnfiguring the cndensatin cycle. T d s, the technician may select hw lng the cndensatin is required t be active fr every 10 secnds f the cycle. Range [0 10], 2 by default. SAT test: Access t a new screen where the technician can test each f the ven cmpnents. Update Sftware: Prcess fr updating the cntrl panel sftware. Insert a USB memry stick cntaining the new versin. Calibrate thermcuples: Start the thermcuple calibratin prcess, selecting the required time (frm 10 t 300 secnds, 30 and 120 by default in electric and gas vens respectively). This is the length f time during which the prbes shuld be measuring this. When this functin is activated, the value f the 4 thermcuples (TC, TV, TG, TN) is displayed. The 4 thermcuples shuld measure between 80 and 110 ºC First, the ven is set tsteam mde until TC reaches 99 degrees. This step is cnsidered preliminary t calibratin and shuld nt be cunted in the calibratin time. Next, perate the CV utput cntinuusly s that the TC, TN, TV prbes (nly in electric vens) and TG prbe measure values between 80 and 110ºC. When all the values measured by the temperature prbes have been determined (CV takes the set time withut a break while running, withut any value changing mre than ne degree), the prbes are taken as a reference frm 100ºC, and all the thermcuples are calibrated. Therefre, the difference f all the values with respect t 100 is nted. This value is used t adjust subsequent displays f the thermcuples. If the calibratin cannt be cmpleted within 15 minutes, the crrespnding errr is displayed The user may abrt the thermcuple calibratin prcess at any mment.
